Oh, yes, of course I made mistakes! It can be very frustrating, but I just stay calm and fix it. Just about anything can be fixed or redone, it's just cake after all. For example, this cake- I didn't let the ganache cool enough before pouring it. It ended up dripping all the way down the sides while I was working on the ice cream part. So I scraped it off the sides, re-smoothed the buttercream and re-added the drips!

The sweating will happen when you have a difference in temp, cold fridge/warm room. It's normal and will happen. I can only speak from experience in my climate, I've never made or delivered a cake outside of New England. The cake will sweat as it comes to room temp. But, the condensation will evaporate also. As long as you don't touch the surface the moisture will evaporate and you won't have any harm to the fondant. I use the dry ice for delivery to keep the cake from melting in warm temperatures and keep it sturdy for long deliveries (I frequently drive 2 hours to venues). It has nothing to do with preventing condensation not he cake, In the summer it will keep the cake a little colder longer and help keep the cake from melting in all the outdoor weddings! That being said, if anything the dry ice will make the sweating worse because the cake will be colder than fridge temperature at delivery. Hope that helps!

Shaheera Alimohamed I accidentally deleted that clip while I was editing :( I just painted the reflections on with white food color. But, you could also cut out white fondant for those pieces.
