What does "over the one" mean? You lost me at the end. I read music and I know those chords, but I wish I could sit down and play with no restrictions. I'm filling in for our organ player, but I feel totally lost. I learned more from your tutorial than anyone elses.

It means I'm playing the "one" note in my left hand or the bass player is playing that note. (From the number system)
Pretty much the first chord in the scale of the key you're playing in

That part that you're in between is called the Blue scale most gospel is off of the blue scale but it does resemble l c minor
