I like this video. Im always making my homemade ice cream custard mixture way too thick. Its almost unpourable? Is this harming the finished product? And if I use a blender will this help?
I’m sure you found the answer by now, but you can definitely use a blender. You can also add some milk or cream to loosen it up more in the blender as well.

@@sj460162 Try to use an ice cream calculator so that you can tweak recipes more easily and make your own! I’ve only heard good things about salt and straw but i started playing with my own recipes in order to fine tune my bases and adjust them to different recipes that accommodate mix-ins and flavorings and stuff. It sounds complicated but it really doesn’t take all that long to just plug in numbers to adjust ratios :)

There is a milk..we can't make gelato without milk..the one without milk is called sorbet

il panno che ha pulito il secchio è lo stesso che ha pulito il tavolo e va anche dentro il gelato, non mi sembra corretto come lavorare con l'igiene
you must be seriously kidding me, this looks ridiculous, this is my fourth year as an Italian gelato maker in romania but buddy, here i came thinking i could learn some tricks, but this, this is way below my expectation. First of all no gloves, no bonnet or something, that t-shirt, finally washing that gelato spoon would leave the spoon wet and then it will become ice on contact with the gelato, making the otherwise very creamy texture icy here and there, not so cool.
Also i wonder why so many gelato making companies are making the gelato in open bin and not the closed type round metal containers, because this way the gelato stays fresh for a longer period of time especially the surface which otherwise after 1 or 2 days will get a not so goody taste. And if the weather is bad it's not impossible for the gelato to stay in that cabinet for a week or even more, and that my friend is worse than an ice cream by far.

Sandeep Kadapamannil That's simple. Go to Italy, find a quality gelateria that hires people and work there for at least half a year. You'll learn how to make quality gelato.

Sorry but there's no proper hygiene in there when he wiped the cloth into the table and then used it again to wipe the sides of the gelato..yuck!

This is not gelato!! I am quite surprised that gelato is from Italy and even I make proper gelato! And that spoon method to shape the gelato... That is completely unnecessary and affects the texture of the gelato. And I agree with some of the other comments- that is not proper hygiene! Customers don't know how dirty the gelato is.

Ha detto che il mantecatore porta il gelato a -60 gradi..questo non sa niente di gelato.. mi piacerebbe chiedergli se sa cos’è l’overun😂
