OMG how am I going to eat this with molds...but yeah my late grandfather used to eat meat that were air dried and left to rot so what's the big deal here.. I also love eating air-dried meat except the maggots in it😅
@ Shiny Li Breese Chinese, Japanese, Korean, etc... cuisines are so diverse and they also have their own ways of doing similar dishes. Even though I will not try many of her recipes, because of the lack of ingredients for one reason but I can adapt other recipes to my local ingredients I do like to watch her videos. On the other side, I do love to see how people live in other countries, particularly in the rural areas. I will keep watching Fujian Gandma videos 😍

I mean, I know what they were going for, using the straw to get a particular mold to grow on the tofu, but the end product seemed to have more than one type of mold growing on it. It looks like there were at least 3 different sorts, if not more. At that point you have no idea whether the stuff is safe to eat or not. In most cases an upset stomach will probably be the worst thing that will happen, but still... can't say for sure there isn't some deadly toxin in there.

白色透明才正確啲, 係面頭灑啲酒落去會發酵 有白色透明毛毛很靚啲
我自己做的豆腐压得很干,之后用烤箱烤干表皮的水份发酵,长出来绒绒的白毛。
感謝做豆腐過程。只是塑膠水瓢用在高溫的熱豆漿感覺不太好。

看了阿嬤視頻後,我花了一夜搜尋資料,也看了其他各種製做黴豆腐視頻,一開始我也是覺得這個彩色黴豆腐絕對是不行的,一般都是純白色的毛,如果放置時間長了白毛上會有黑色孢子,之後黑色孢子成熟後會轉黑毛。
試著搜農村裡製的毛豆腐,發現也實在不乏彩色毛,紅色綠色黑色紫色,也發現這些都是製做時程15天的毛豆腐,而一般常見的白毛都是1週左右的。
也許這就是各家農村不同的做法,只是目前大衆的認知和宣傳還是以白毛為主流。
不...那就代表這些五顏六色的影片作者都做失敗了...不要誤導觀眾。
製作任何醃漬、發酵食品,凡是有白色以外的菌絲,都不應該再食用。
也許當地人世世代代這樣吃習慣了(聳肩),但放上網路說是美食,有人跟著照做,看到一樣繽紛的菌絲而吃下肚,
造成的後果恐不堪設想。
