    For all you blr folk who seem to have taken a personal offense to the dosa being dissed... Quite frankly I'm not sure what you're so offended about... Every household in south of india has their own version of it... In my opinion much better versions of the ones we tried exist and I've had the opportunity to have some of the better ones... Dosas do not originate from karnataka contrary to popular belief they've been mentioned in tamil scripts which date before sanskrit so they have been attributed to the region as well... But that is not the point here... There's a thousand other great culinary origins you can be proud of in the region and we've celebrated those... The dosa game is just too hyped for no great reason is all I'm saying.. I wouldn't normally give an explanation but this just seemed to be a constant rant by some over enthusiastic folk in the comment section... Here's my way of acknowledging that...

      The ones mentioned in Tamil script are the non fermented pankcake dosas. The current dosas that exist today are the ones that originated from Karnataka. Tamil nadu does not even have the concept of flat crispy dosas. Their dosas are think and fluffy. A better point to focus on would be that Karnataka has a ton of variety of dosas with each dosa specific to a district, something not present in Tamil Nadu. So why is it that the so called place of origin of dosa lacks the varieties that should have existed in the first place.

      Bro you got to do the reaserch before u shit on something...sure you might like dominos pizza better than the one they make in Naples but it doesn't mean that dominos makes the best pizzas ...you have to decide it yourself after eating in atleast 15 palaces because the masala dose recipe in banglore is perfected to the T and it differs slightly from place to place , the average darshni dose tastes better than most the places in North India and for your information there are mor than 1000 darshinis in Bangalore.

      Sure each person has their own opinions and preferences but Bangalore is a place that definitely serves one of the best dosas and we have dosas from each district or region of Karnataka, providing not only flavour but variety. You guys definitely need to do better research before commenting on our beloved breakfast - honestly the whole city loves them and they are far better than all those white dosas available up north which “claim” to be dosas but are nothing more than under cooked batter

      As a Mallu born and raised in B'lore, where my 'Mums dosa is the best' tagline flows, I concur.. nevertheless have eaten horrible beetroot masala dosas at Indian coffee houses in Kerala (their beef/chicken cutlets are not bad though) and Shezwan sauce filled bullcrap Mumbai dosas with watery chutneys.. You have specifically gone out on a limb dissing the dosa game of B'lore at your own peril.. though I prefer the thin crispy dosas of TN with their chutneys.. the next best are in Karnataka and you and your team should have given it more respect nonetheless...

    Malgudi Days was directed by Legend of Kannada Film Industry ShankarNag and it was shot in Agumbe village Shivamogga District surrounded by rainforest of western ghats

    Since you guys really love Non Veg, you should give NE a try. Yes, going around to all the 7 states won't be possible, but Guwahati itself is like a metro with people from all over the NE and rest of India. Apart from the Assamese and other tribal food of Assam (Bodo, Mising, Singpho etc), you also get Naga, Manipuri, Nepali, Bengali etc. Have a hugh variety of fishes and pork is the most loved meat, especially the smoked pork 🤤. Chilli Smoked Pork dry fry is the best chakna with beer. We are basically meat & fish lovers paradise. Other than the huge variety of greens, some of which are often discarded as "junglee patte" by rest of the country.
    We might not be using masala much, but we do know our herbs and roots and Bamboo Shoot. You have to try to know it.
    In case you do decide to try out NE food, it's gonna be a long long season.

      @@TheBigForkers just be wary of the Bhut Jolokia aka Raja Mircha aka King Chilly aka Ghost Pepper, that is used in many of our preparations. 😜
      Apart from Pork, we also really really love our chillies including the bird eye and dhalle varieties too.

      @@Adijag Cafe Max is iconic. Not as good as its heyday but not a bad option at all. They were famous even 10 years ago when I first went there. Naati Cafe was a brilliant choice, I've eaten their food countless times and it truly is a gem. There were a few misses but I'm glad they are exploring other restaurants.

    I don't like the benne dosa at ctr too. But at vidyarthi bhavan, Davangere benne dose in RR nagar and at some small carts , sell some of the best dosas. Unfortunately you guys tried it at the wrong places in this episode.

      The texture of the dosa isnt great at CTR. VIdyarthi bhavan and Janardhan hotel are way better.

    Drinking beer is a symbol of progressive city....hmmm...I don't have issues with PPL who drink alcoholic beverages...but saying that it is a sign of progression shows the time we are living in...

      It's about the context. It's progressive because people can have a single beer and go back to work and not only get drunk to get hammered. People have an unhealthy relationship with alcohol at times.

    Sid really saves this episode. Shanks has for most of it a prejudiced palate and thats coming from most of the episodes he's ever reviewed. Playing the disinterested villain of this series pretty well

      We think some folks are upset because Shanks shared his honest opinion about the dosa in Bangalore. Its ok for him to be honest and share that, and its okay for folks to take that sharing in anyways they feel comfy.
      In Shank's defense, this opinion based based on his experience during the shoot and previous trips.

      @@TheBigForkers Everyones entitled to their opinion for sure. For eg. the recent Korean restaurant, Shanks was okay with the way he came across without having prior knowledge about the food. Sid on the other hand has definitely had better south korean food before but the way he critiques it is entertaining, no extreme shitting on a place if he doesn't like it. (shot 16 months ago, covid still prevalent, restaurants still getting back to their best, the reviews do hurt them even more)
      I guess its the places the producers chose this season just dips the quality a bit and they seemed quite icky throughout the season. Anyways, I love this show man, this season just seemed too hasty.
      ps. Dont take shanky to a veg restaurant, he's hardwired to shit on it 😅

      I don't see what you guys are so proud about in that dosa... Please explain this mad love for it... I don't think I'd defend even beef parottas from kerala to this extent... Haha... Every fckin household in all of south India makes a version of dosa... Why do blr folks take this immense pride in it... Dosas dont even originate in the region... They come from tamil nadu...       @@shashankjayakumar4990 Literally said that I'm not from Bangalore and Im not just talking about benne dosas. Dosas have been integrated into blr breakfast culture. I could step into a darshini type joint around any locality and expect a crisp ass dosa that's richer than the average dosa in Tamil Nadu or Kerala. From my experience, dosas made in TN and KL households are way better than the ones you get outside. Egg dosas at chettinadu spots are an exception tho imo but that's different. So it's the convenience and an expectation of a minimum standard of sorts cause otherwise there's not much of a difference in dosas. TN annas be going up north too with the same recipes.

    Dosa scene in Mumbai is good. Spread your dosa thin, add some schezwan sauce, add cheese, cut to small pieces, serve it hot with green chutney.

      Even I found CTR overrated. Lacked the sourness that a dosa needs. The masala dosa leaned a lot on the ghee and the masala for its flavours.

    Weird combination, but I love to eat Idli with masala Pav and Sambar, grab the Idli like it's bhaji using the Pav and dip it in Sambar. It's better than butter chicken with fried rice for sure😋

    i will not agree that we bangalore dont have the best dosa, first thing u people have tried the dosa in wrong places , there are particular places where u can get the best dosa, i can challenge that the dosa u will get in vidharthi bhavan and chikkanna tiffin room and slv hotel in gandhi bazar serves are the best in the world. this breakfast trail episode is a complete flop. please do good research about the hotel and the best dishes that are being there before tasting . thank you

    Food programs are something that we like to watch with the whole family . And even in this if expletives are used ..it makes it very uncomfortable when you have small kids around who would think using these words is the norm. Very very disappointing..and disheartening.

      True, we do our research months/weeks/days in advance and local line producers also do the ground work. Every now and then we change things in the last minute. But a lot of thought goes into picking a spot.

    Anybody assuming to judge Dosas of Bangalore or Karnataka is basically trying to teach about Pizzas to Italians and Parathas to Punjabis. Don't know who gave this guy some whacky idea that Idli Dosa Vada is South Indian, they're not, they're purely a Karnataka product. They weren't invented in the 1850s, but were already there in the 12th century for sure and probably centuries before that. And Karnataka was a bigger region so the others picked up. So when you wanna know what a Dosa should be, just have the dosa here and accept whatever it is. Any other form you like, good for you, you surely have the right to enjoy your bastardized dosa.
    If you're not yet convinced then we don't mind analysing the dosa so thread bare that you would forget you had a dosa on your life. Just who calls the Alu inside the Dosa as Masala? The Masala is a North Indian word used for the red chutney that's smeared on Masala Dosas which the Masala Dosa inventor in Udupi gladly used. When basic knowledge of any food is lacking why the tamasha?
    We eat Dosas here as staple food even the ragi dosa much before any hotel would make it just decades ago, so we do know very well what we invented and we live on everyday in & out! This is the one of the most preposterous ignorant food criticisms I've come across among TH-cam vloggers!

      Shanky is Mallu and has his opinions on Dosa.
      Sid doesnt know about South Indian food and didnt make any claims, instead he gave very clear disclaimers and quite liked the dosas. CTR was an extra level of greasy.
      The red chutney smeared is a Mylary Dosa and is not from Udipi, but Mysore.
      We know people would get upset about someone sharing their opinions, so bring it on.

      Mylari Dose? Who's that? Are you out of your blistering mind, those guys are some nice Dose makers. There's no such thing as a Mysore Dosa let alone Mysore Masala Dose and to boot Mylari Dose is a Sagu Dose not Masala. Mysore Masala is a Bombay concoction there's no such thing in Karnataka & Mysore. The only Dose to have a place name is Davangere & of late something called as the Mulbagal Dose. Check out Kripal Ammana's episode on the Udupi masala dose story where for heaven's sake he has clarified about this.
      It is precisely this millennial TH-cam vlogger gibberish that we want to dispel quickly before it does more damage. This has become a huge menace of late with millennial hipster kids and semi naturalized migrants making half baked food vlogs & promoting their own fiction. Who the heck tells you Veena stores is an icon when I had cousins and nephews being born next door in Lakshmi maternity home from the early 90s. They were just small condiment store nobody even realised existed and voila just 5-6 years ago they're some iconic idli joint! For heaven's sakes the real icons from nearly 100 years ago are disappearing like the Brindavan, Ullas, Sangam or the Victoria... All gone. The only iconic ones around are the Airlines, The Indian coffee House or the Koshy's, Janatha, Janardhan, MTR, Udupi Sri Krishna Bhavan(Balepet) NMH etc, did you see these on your hipster list?
      Today a 25 year old Shivaji military hotel is touted as a 80 year old icon and we're shocked he was just a shack 10 years ago. But TH-cam clowns have cooked up a century old legacy and the owner obviously is laughing all the way to the bank, same with Veena. The truth is earlier eating out was frowned upon and grannies used to mutter what those guys from whatever caste might have added God knows what!? This is the origin of Brahmin hotels in Karnataka. I've been eating out since early 80s, so please I do know my hotel menu as also our home food stuff which is very different from the hotels and every home and town in Karnataka makes it's own variation and there's no standard to it. If your production & research teams wanna know local food ask the food industry seniors or senior locals not the ADD afflicted illiterate digital millennials.
      While I totally concur with your take on the Cafe Max thing since the guys who took over from the late Alex Schorlemmer have really done it to the ground. Alex was a very tidy German chap who married an local Tamil girl and started his neat little German cafe eponymously named as Cafe Schorlemmer in Max Mueller Bhavan in the early 90s with delicious banana cakes and apple pies. Then changed the lovely German place to Cafe Max 2 decades later and then passed away. His widow I guess sold it to the present owners who just aren't worth the old fame.
      And Yes please tell that self annointed Mallu Dosa expert to learn some manners, coz of you wanna roast the townspeople you're guest visiting, be like Russell Peters. Know your game and be spot on, if not it can go South very badly. I've no comments on Sid 👍🏻. You're into food reviewing not in making pathetic ill advised wise cracks of Indian places. Leave that to AIB... Now if you want me to bring more on, I don't mind doing it in person, since I'm old Town kid and can really appraise you on the town game & history to an good extent though there are greater older experts who you don't even bother with. These are very disappointing feedbacks on what can be a really good channel.

      We take a wide mix of data across food writers, food historians etc. and then decide where to shoot depending on conditions. This shoot being 16 months ago as places were just opening.
      Kripal only shoots there, obviously will know more. We don't make vlogs, it's a TV show with a season shot in 15 days.
