He could par boil the vegetables so he doesn’t have to use the damn microwave. Grill, butter, spices, squirt of 10-1 water/vinegar. Throw a stainless prep bowl over 4-5 minutes and it’s done as fast as the microwave.
Im sorry add 20 orders at a time and hed be tripping over himself. A busy night looks nothing like this....in any restaurant. Ive been a chef in almost every level and call myself cleanly and its almost impossible to move like this in a busy rush. Lol

I’ve never laughed at someone for trying so hard to give a compliment in an industry they’ve never worked. “The effort” to clean up a plate before serving it is a basic standard. A kid getting paid 2 bucks more than minimum wage is doing the exact same thing and then getting high with the dishwasher and a busboy 5 minutes later.
Everyone wants gloves until they learn that in most places that use gloves, people will pick things up off the floor, touch their hair, sweep etc and then touch your food without changing them
Don't forget they touch money. If you see they forgot and you ask politely they will apologize and change their gloves only applies to places where you watch the food prep obviously. Gloves aren't a good solution but don't forget if someone has bad hand hygiene gloves don't help but neither does no gloves if they don't wash their hands each time they touch something gross or new its not much better. You get best results for hand hygiene in places where the cooks are separate from the cashiers and cleaners.

Did a good job! Ive been in the industry for 17 years and seeing a new cook make something like this is awesome. Couple tips, get a small pot with a small fine mesh strainer and use that to heat your veggies before they go on the grill, it will keep from that subtle plastic taste from the portion bags, and for the steak try and keep the fat side towards the edge, keeps from juices leaking off the plate 😁

Have you never seen microwave steam in bag vegetables? You can get them at your local store, usually in the frozen section. They already have the liquids needed to steam in the bag, sometimes even a sauce, and the bag has intentionally weak sections to let it vent a bit so it doesn't explode. You can do exactly the same thing at home using a regular plastic bag with a little water, just don't tightly seal it so it can vent a bit. Microwaving steamed vegetables are A LOT faster to prepare.
I was on my way becoming a chef, but I changed my mind. I am so glad for that. Not that I am particularly happy about my current job, but because being a chef seems soooooo hard and stressful. No I'm not being ironic. Hats off for chefs caring about her their work! You rock!
@avb19d6 my guess is protein should be last as it's the star of the dish so should be on top of everything and be showing. Pasta/starch is filler so on the bottom (plus it's usually bland colour) and the vegetables lighten it all up.

A lot of people here don’t realize a lot of their sides come from a microwaved plastic bag. Restaurants aren’t your moms kitchen, that’s why the nice ones are so expensive.
It'd also be incredibly innocent for a restaurant to never use a microwave. Microwaved =/= automatically bad. It's literally just a means of heating things up. Most restaurant ingredients aside from proteins like beef or fish are prepped anyway.

They actually hold their nutrition just as well as freshly harvested veggies, and better than the ones you pick up "fresh" in the produce section of your local grocery store. Still, I'd never microwave any veggies--fresh or frozen--just to steam them. That's what a stove is for.

@@samuelcaldwell1610 by the way the bag he is using here doesnt even look like a food grade plastic (which by the way is still unsafe ). its a straight up little piece of shrink wrap or plastic bag that he tied. supposed food grade plastic used in steam bags is way thicker.

A lot of people here don’t realize a lot of their sides come from a microwaved plastic bag. Restaurants aren’t your moms kitchen, that’s why the nice ones are so expensive.
It'd also be incredibly innocent for a restaurant to never use a microwave.
Microwaved =/= automatically bad. It's literally just a means of heating things up. Most restaurant ingredients aside from proteins like beef or fish are prepped anyway.

@@Nxrthluvsyou there's actually nothing wrong with frozen veggies. They actually hold their nutrition just as well as freshly harvested veggies, and better than the ones you pick up "fresh" in the produce section of your local grocery store.
Still, I'd never microwave any veggies--fresh or frozen--just to steam them. That's what a stove is for.
