Ioro is a bad downmake of his KoF sprites. The others come from the older Art of Fighting and Fatal Fury games, which had bigger sprites - albeit with worse animation.
Those are all actual Tekken 2 stages though. It actually looks like everything above the horizon line is literally the .jpg of the background from the original game. Which is kinda pretty impressive.

Iori is from 95 or 98, it's really hard to tell, Terry and Joe are from Fatal fury 2 and the stages are from fatal fury 1. I don't know where the stage with the vending machines is from, but it sure ain't KOF or street fighter. Honestly I'm impressed they used so many different games instead of using one and making it look cohesive, i.e, not shitty.

And typing of the SNES Tekken 2, the piece of music that you didn't like was a rendition of Akira Yuki's Virtua Fighter 2 theme, "Ride the Tiger".

I remember long ago playing some bootlegged GBA carts that had a variety of old arcade games, sometimes actual GBA games, and other odd bootlegs all smashed together in one cartridge. I recall Kart Fighter being in one of them. I'm kinda weird when it comes to fighting games. I've probably spent more time coding characters in MUGEN than I have spent actually playing fighting games, if you don't count Smash Bros, which I still am pretty bad at.
Yeah that's true but I actually kinda like Fighting Jam I wish it could have turned out like it was planned too though. The inconsistent sprites is on purpose to represent there native games not saying it looks amazing but it's okay, the game has a cool feel to it specially the OP Street Fighter 2 characters.

Well, on King of Fighters 2000, the stage with the drummers in the back is actually the Pao Pao Cafe, from the SNES port of Fatal Fury, most likely. The beach level seems like the Michael Max stage from the same game, but I'm not sure ^^ And I've been playing Ryu for the past... 23 years or so. Crap, I'm old :P
Speaking of fighting games, they finally revealed a new Gundam fighting game for the PS4. Hopefully it'll be as good as Full Boost was, because Force was kind of a letdown.
