Great video question when ever I open to do the turns or flips my temp drops from 500 to 400 and I can't get the temp back up to 500 before I move it for the next 2 minutes
Thanks for watching. Two things. Don’t use the deflector plate and make sure your coals are completely hot for the sear. I had the exact same issue and the easiest way to resolve that is let it burn at 500° for a good five to eight mins before you put the steak back on. It truly makes a difference in retaining heat when you open the lid and getting back to 500°.
