I honestly get anxiety when i watch the meat getting chopped by those ginormous cleavers 😅 blazing fast speed with something that can chop all your fingers off in one go! But, my god those dishes are gorgeous!

That's why the recommendation is masks.
If a food worker has covid, gloves or not doesn't matter because that's not how it's spread.
If you're talking about other diseases or infections which spread through skin or surface contact that's different.

Understand what the modes of transmission are and how the preventative steps work.
If you're worried about covid transmission through his hands, gloves don't help, sanitizing his hands will.
If he's got it on his hands, putting gloves on does nothing as he has to touch the gloves to put them on.
If he sanitizes his hands, then his hands are clean and therefore gloves would still do nothing.
ETA, obviously if he's actually infected gloves still do nothing as the droplets exiting his nose and mouth are what spreads the virus.
This type of lunchbox food is so hyped in Hongkong. I tried it. The meat was not warm, mostly it was cold. The sauce they put on top was also not tasty.
Prefer dim sum while in Hongkong. Lunchboxes are for all office people and workers

Are those Sushi chefs non-smokers? Impossible. Bless you! I met one ,he kept going away twice an hour , could feel even from his uniform and breathing. Imagine how yuck the sushi tasted.
Saw so many comments about not wearing gloves. Like it or not, if it does not feel comfortable for you then just be it. As you can see, many still do purchase from such hawkers. If everyone wants the hawker to wear glove and only they will purchase, then the hawkers will go out of business. Just don't get it why there's always a fuss about wearing glove. Are you wearing glove while you are preparing your own food? Lots of places are like that. Like it or leave it. Simple as that.
if it's my own food, i know i washed my hands and i know what i touched, i won't know if this guy did, i won't know if he scratched his asshole and picked his nose before touching that food, plastic gloves don't cost that much.

Just because he uses his hands does not mean the food is unhygienic. You need to broaden your horizons a bit.
Actually, All the chefs in most expensive restaurants that got 3 michelin stars uses their hands to make the foods. And also all the top sushi chefs in those expensive omakase uses their hands to make sushi in front of you. You should check out more on legit expensive and good restaurants than those pretentious "luxury restaurants".

Went there a few times wasn't all that impressive
Look back when there were no plastic screens or guards, so dusty, and the choppers used to work with a cigarette between the lips, Once I saw a police Constable shouted on him to take it off, it took the officer three time until pretending to book the stubborn chopper, funny scene. Therefore, I found it is in the range of police power . The bbq shop was located at corner of Nullah Road & Sai Yeung Choy St. in 80’s. Cigarette smelled products from the smokers how do you like it? I had that kind of awful or disgusting smell from the Shanghainese meat buns,and dumplings wrapped by those heavy smokers. Bad luck!

at least they don't show the "scrapping" of the chopping block, where they skim off a few millimetres with the chopper and take off all the loose wood fibres along with any engrained fats/tiny bits of meat...
