Thanks, I got them from a fair but they sell them here www.petalcrafts.com/petal-dust-palette-setb.html It did say on the information that they were edible :)
I tend to use water, but only for small areas as it does split a bit on the surface sometimes. You should really use an alcohol or lemon with it though :) x

Is it possible to use gel color for shading if I don't have the petal dust?
