What if you put the Corn meal into a grinder to make it finer? Or maybe there’s a finer ground meal on the market somewhere? But I’m asking because it might come together a bit better and when you sprinkle on the top coat it might sink in better as well. 🤷🏻♀️ IDK I’m just throwing it out there 😉😉
If I were living far from town, wanted some breakfast cereal, and had corn meal in the cupboard, I'd actually give this a go. Just for the fun of it. Spend the afternoon puttering in the kitchen, put a bunch in a jar for later. Yeah, it's a good thing to know. I'd do the one that you spread real thin. I think the original corn flakes were made with dry whole corn kernels that were first steamed soft and then squished flat into the flakes. Then dried and toasted. Not sure if that is the current process though.
The fried tortillas with sugar are nearly the same as a Mexican dessert called bunuelos. Cinnamon sugar is used over fried flour tortillas and it's served most often around Christmas time. Yummy stuff!

Use the baked recipe with the cornmeal on top to make honey nut cornflakes. Instead of sprinkling the top with more cornmeal, sprinkle it with almond meal (almond flour). After breaking it up, use a pastry brush to brush the flakes with honey on both sides. Then finish with your second bake. You could try brushing on the honey before breaking it up, but it might soften them up too much to break. The batter would probably be too soft to brush with honey before the first baking, but you could try it. Just some ideas you might want to try, I know you like to experiment.

The one you made with the dough makes me think of Blatz Kuchen which is a German pastry that my mom and family used to make. You roll it out super thin and then when it's out of the oven you brush melted butter on top and put sugar on it. It's really good.

Maize flour (polenta) is mixed into a stiff dough and squeezed through a disk with small holes in it. As it comes through cut the blobs off with a knife. Allow to dry slightly so they are not sticky and press flat between rollers. Cook in an oven until golden and crispy.

Barry, I have a a bit of advice for trying to evenly spread things in a pan like you were doing with the corn stuff. put a layer of waxed paper on top of it so it doesn't stick, take a pan of the same size, and press it down to flatten and spread the batter/dough.
So I just tried a Flake bar (we have a British Emporium here locally), and it was NOT what I expected, but it was still good! My son and I will def be trying more British treats and foods!

Thicker corn flakes are a win in my book. I mean, think about it, they stay crunchy for more time, and when you get to the end of the bowl instead of having soggy corn flakes you have flakes that are soggy on the outside and crunchy on the inside, what a texture combo!
What I did was corn flakes in a bowl. Adding homemade apple & cinnamon syrup added white sugar mix well. It’s was good! This is how I made them taste like Frosted Flakes I didn’t even use milk. Just ate them so.

Corn flakes are made from corn kernals that are boiled, peeled off, than put through a pair of rolers that presses them flat and then dry roasted. So there is no wheat involved.

People will make them themselves or purchase them. They can be made fresh with batter and a flower like mold, or in this case, people also make them by frying tortillas.
The honey water is a cold remedy, at least in my family it is(I’m from Central Florida). Boil water like you’re making Tea and then just put honey in it and it’ll help with a sore throat and cough.
Not sure if anyone suggested this...but if you do the second type... spread it on half a sheet of parchment paper... make it thin...but then fold over the other side of the paper onto the batter... Squish it and gently peal it back... it will be thin, super thin without adding water... Hugs
Yes, I always have to wear an apron whenever I cook with flour or corn starch because that stuff ends up everywhere. I once was keeping my cocoa powder in a ziploc bag, inside a air tight bowl and I was soooo sick and all I wanted was hot chocolate, well I got everything together and went to put away the cocoa powder and wasn't thinking, obviously, because I grabbed the bag and squeezed it, you know, to remove access air so it would fit in the bowl. That cocoa powder turned into air and was ALL over my white kitchen. I almost cried. I left it, I couldn't do it, I was too sick and instead of grabbed the dust buster, I grabbed a wet rag which made everything 10 times worse. Needless to say it stayed that way until my husband returned from work. It's funny now but not at the time

I am not sure if that is the current process either, but I do know they start with ears of corn. They do not reconstitute from corn meal AT ALL.

Use a cake decorators metal spatula to spread the batter it will spread more evenly
