The fact that despite how many pies they make they still seem to do a lot by hand is impressive. I was thrown back when I saw them crack eggs. In the bakery I worked at for a year we had big 10 liter cartons of whole egg. I didn’t touch a single egg shell working there.
What I find so enjoyable about this video is Petra’s child like fascination with pies. You can't help but tell she loves her craft! It’s no wonder that people fortunate live in her area love her pies.
Petee’s has been my go-to pie shop (both locations) for almost a decade now. During the warm season I love stopping by the shop to grab a slice a la mode, and during chilly season I bring their pies to all my holiday get togethers (I get requests to “not forget to bring a pie from that spot you brought from last year” lol). My non-pie friends tell me this is “the only acceptable pie” they’ll actually enjoy. I’ve tried many pie shops throughout NYC, and Petee’s is still top of my list. Their crust is CRACK. So happy to see them featured on one of my favorite YT channels!
Seems like a wasted opportunity that they talked about the Nesselrode pie, how it virtually disappeared from NYC and then..... nothing. They didn't talk about it, whats in it, or tried it. Bummer.
A little research indicates that it's a fluffy custard-based pie, with pureed chestnuts, candied fruit, and traditionally rum or brandy (which the home baking version of the Petee's recipe omits).
@@myladycasagrande863maybe when North American Chestnuts went extinct many of its recipes went with it, as I don't think it was immediate that the importation of Asian chestnuts as a replacement began. Also the Asian variety we use today historically was considered inferior for many recipes, I believe because of the water content.

Sweet potato pie is the "quintessential pie" for..uh....many of the darker folks. But since Petee's has sweet potato too, kudos to Petee. She's the best. Oh, she also has classic cornmeal vinegar chess, pecan, and coconut custard. Covers all the southern favs.

We have that pumpkin "pie" she mentioned. A custard made from duck's eggs called "sang kaya fuk thong" steamed inside of a pumpkin's shell. ฟักทอง fukthong is pumpkin in Thai.

Can confirm Petee's is quite good. There's one in Brooklyn and Manhattan. I like their various berry pies specifically the ones with crumbs.
