Supper looks delicious! Can you believe we got 7-8 inches of snow in Baker,Fl (Florida Panhandle)?It was so beautiful , a blessing from God. It snowed all day, we took the Jeep to the river and had the best time. In all my snow chasing I’ve never seen this much snow and it won’t melt until Friday. Katie, I don’t know if you know this, but you can use the liquid off a can of chickpeas as an egg type substitute as well. You’ll have to look it up to see exactly how to use it, but it might be another option for you.

My mom always added like 1/4 lb. of pork sausage to her meat loaf. She said she started doing that when she didn't have the spices she thought she had when she started making the meat loaf & we all liked it so much she just kept doing it. Now I do the same. 1/4 lb. per lb. of ground beef.
Katie, I don't know if you can have Rice Krispies, but substituting that for the oatmeal is wonderful! My grandmother served it that way, probably 50 years ago, it makes such a difference! Everyone I've ever served it to loved it. 😊

Just an idea that I've use when i was baking & discovered that I had no almond or gluten free flour. I measured out the amount of flour required with oatmeal. I ground that to flour consistency & measured , adding additional oatmeal & grinding with food processor & to make completed flour requirement. Any left overs can be stored in air tight container for future use.

And They also got a piece of Mexican chocolate pie (creamy chocolate pudding pie with cinnamon) and whipped cream topping. Makes Them smile with delight.
That was quite the meal. Need food like that when it's cold. Make my fruit crisp with just rolled oats, no flour. I'll add a little water and some oil. Half fruit and half oats, then it's good for breakfast. I'm like Katie's friend, will often add grated carrot to my meatloaf. Hello from freezing Oregon.
Katie: when you are chopping an onion, to stop the eye irritation, wet a paper towel and sit that paper towel next to where to are chopping the onion. Ive tried it and it works. I saw it on a cooking show i watch on TH-cam.
Oh my Tipper, that is what I did yesterday, was used up all my odds & ends of my cheeses and made sure I used American cheese, I used the yellow and white, because that is what my husband likes best and that is what I put on top and I used olive oil and smart balance for my thickening. I use thick whipping cream and 2 per scent milk. Yummy it was good!

Shredding your won cheese is always best. The shreds have something on them to prevent them sticking together, it never tastes or melts right. All looks yummy x
There’s an anticaking agent in shredded cheese ( cellulose and starch) that prevents it from clumping. You can rinse this off just before using if you don’t have block cheese.

Have you ever tried boiling your potatoes with chicken broth, and then using your chicken broth as the liquid to mix? I’ve done that few times. It gives him a good flavor.
My family always put ground mustard in the cheese sauce, but have used prepared 1 teaspoon of Dijon mustard in a pinch in our baked mac and cheese but also nutmeg 1/8th to 1/4 teaspoon. It just accentuates the flavor of the cheese
That macaroni looks delicious. We always love meatloaf left over in a sandwich with mayonnaise! I have a recipe for a crockpot Mac and cheese. For my larger crock pot I use -16 oz box of elbow noodles (boiled and drain water) -12 oz sharp cheddar -12 oz Colby Jack cheese -lg can of evaporated milk -1 cup milk 2eggs -salt and pepper to taste I mix all of the above and place in crockpot. I will cut up wedges of cream cheese and put in it after I put it in crock pot. Depending on where I take it I even add a dash of cinnamon. Sounds crazy but it is delicious! I have told you before about we have to have a special diet for Lillyanne (grandbaby) because of her genetic metobolic disorder where her body can’t break down long chain fats for energy. We don’t use butter of course. So when we make mashed potatoes we boil the potatoes mash them and add a heaping tablespoon of Walden farms fat free mayonnaise. No dairy in it. And I use butter buds to season with salt and pepper. I buy the butter buds on Amazon because they are hard to find in stores. Keep up the good work Katie! Macaroni and cheese is the best!! You can freeze that stuff and it just gets better as it sits in the freezer, so good. I'm with Matt on this meal. You know, mac and cheese is like dessert as far as I'm concerned. Just love it.
Those recipes sounded and looked great! Katie...sometimes I use pureed pumpkin as a binder in foods that are suitable with the flavor. Just wanted to share that. We always celebrate "Burns Night" (Scotland's national poet, Robert Burns' birthday...) and I make meatloaf instead of the traditional haggis. Meatloaf is such a tasty, versatile, and filling food! Hi Katie, if you place a damp/wet paper towel or a damp/wet wash cloth on the table between you and the onion you are cutting the fumes from the onion are absorbed by the wet cloth and will not get in your eyes and make you cry. Give it a try. Great meal ladies.

I kinda wing it similar to a handed down Betty Crocker book and how my parents taught me and it’s not always exactly the same bc I don’t measure spices and sometimes we have peppers and sometimes not lol just depends but thanks for the idea it was a perfect comfort meal in this cold weather 🤗
I don't know if I've ever made the same meatloaf twice! I switch it up, depending on what I have, like crackers, oatmeal, breadcrumbs. If I don't have an egg, I just put in a little mayonnaise. Instead of catsup, maybe some bbq sauce, gravy, or cream of mushroom soup, spaghetti sauce.
Oh, home cook tip for adding liquid to mashed potatoes when you have someone with a milk allergy, use stock. I prefer something lighter like veggie or chicken, but on a night with meatloaf, beef can work. Loved the video and all of Katie's tips and tricks! Stay warm, y'all! I love meatloaf. We ate it a lot when I was growing up and I thought I would never eat it when I grew up but now it’s one of my favorites.😀. Katie, I love your sweater. The color is really good for you. I like the idea of you showcasing Granny’s handiwork. She does such a good job. Is Ira starting to eat solid food yet? Will you have to cook everything he eats? Poor baby, I hope he grows out of some of the allergies. He needs to be able to enjoy ice cream. LOL
My homemade macaroni and cheese uses both dry mustard and cayenne. The mustard adds a nice tang, and the cayenne is so small for the whole recipe most people don't notice. I agree about buying the block of cheese. I experimented with it after you said that, and then I read the back of the package. Yep, extra ingredients to prevent clumping. It doesn't melt properly and seems to clump more when cooking.
I make that same Mac and cheese recipie except I use paprika with the dry mustard and garlic and a little powdered onion also, I also whip an egg into the half and half and it really sets up well.

My boys don't like meatloaf so I don't get it very often these days, it just doesn't make sense to cook something only I will eat, so much gets wasted. I think it's so great you all have made such changes for Katie's needed diet change. I'm not sure my family would have done that for me back in the day, but I definitely would do that for my kids. I feel ya Katie, my second daughter was allergic to so much. Since I nursed all my babies, it had to be what I was consuming . So, my diet changed to accommodate my babies. I actually found i couldn't use and flour ,seeds of any kind. And pretty much any vegetables were out of my diet. I love meatloaf and ended up making it with just meat, onion, eggs and ground pork rinds for the binder. And wrap the whole thing in bacon. With a little bit of sauce on top. It is actually pretty tasty. Even to this day my daughter is so sensitive to almost everything but meat and eggs. She is now 42. You and Corrie are wonderful mama's. A testament to your raising! I'm interested to see their reactions. We all love the ingredients put into it; so I don't think they'll notice. Lol!!
Sometimes I add back some of the potato cooking water instead of adding milk to mashed potatoes. It adds the moisture and along with butter or Butter buds for flavor, it is delicious. To use stronger onions, just saute them before adding.

Macaroni and cheese is the best!! You can freeze that stuff and it just gets better as it sits in the freezer, so good. I'm with Matt on this meal. You know, mac and cheese is like dessert as far as I'm concerned. Just love it.

Katie...sometimes I use pureed pumpkin as a binder in foods that are suitable with the flavor. Just wanted to share that.
We always celebrate "Burns Night" (Scotland's national poet, Robert Burns' birthday...) and I make meatloaf instead of the traditional haggis. Meatloaf is such a tasty, versatile, and filling food!

Hi Katie, if you place a damp/wet paper towel or a damp/wet wash cloth on the table between you and the onion you are cutting the fumes from the onion are absorbed by the wet cloth and will not get in your eyes and make you cry. Give it a try. Great meal ladies.

I made meatloaf tonight bc of watching your video yesterday lol. I kinda wing it similar to a handed down Betty Crocker book and how my parents taught me and it’s not always exactly the same bc I don’t measure spices and sometimes we have peppers and sometimes not lol just depends but thanks for the idea it was a perfect comfort meal in this cold weather 🤗
I don't know if I've ever made the same meatloaf twice! I switch it up, depending on what I have, like crackers, oatmeal, breadcrumbs. If I don't have an egg, I just put in a little mayonnaise. Instead of catsup, maybe some bbq sauce, gravy, or cream of mushroom soup, spaghetti sauce.

Oh, home cook tip for adding liquid to mashed potatoes when you have someone with a milk allergy, use stock. I prefer something lighter like veggie or chicken, but on a night with meatloaf, beef can work. Loved the video and all of Katie's tips and tricks! Stay warm, y'all! I love meatloaf. We ate it a lot when I was growing up and I thought I would never eat it when I grew up but now it’s one of my favorites.😀. Katie, I love your sweater. The color is really good for you. I like the idea of you showcasing Granny’s handiwork. She does such a good job.

My homemade macaroni and cheese uses both dry mustard and cayenne. The mustard adds a nice tang, and the cayenne is so small for the whole recipe most people don't notice. I agree about buying the block of cheese. I experimented with it after you said that, and then I read the back of the package. Yep, extra ingredients to prevent clumping. It doesn't melt properly and seems to clump more when cooking.

I make that same Mac and cheese recipie except I use paprika with the dry mustard and garlic and a little powdered onion also, I also whip an egg into the half and half and it really sets up well.

I have a Mac n cheese recipe that calls for dried mustard and a dash of Worcestershire sauce. It’s honestly one of the best m.n c. recipes I’ve ever had. ❤❤❤

Meatloaf and mashed potatoes is one of my all time favorite meals. My boys don't like meatloaf so I don't get it very often these days, it just doesn't make sense to cook something only I will eat, so much gets wasted. I think it's so great you all have made such changes for Katie's needed diet change. I'm not sure my family would have done that for me back in the day, but I definitely would do that for my kids. That meal looked soooo good 😊.

I feel ya Katie, my second daughter was allergic to so much. Since I nursed all my babies, it had to be what I was consuming . So, my diet changed to accommodate my babies. I actually found i couldn't use and flour ,seeds of any kind. And pretty much any vegetables were out of my diet. I love meatloaf and ended up making it with just meat, onion, eggs and ground pork rinds for the binder. And wrap the whole thing in bacon. With a little bit of sauce on top. It is actually pretty tasty. Even to this day my daughter is so sensitive to almost everything but meat and eggs. She is now 42. You and Corrie are wonderful mama's. A testament to your raising! Sometimes I add back some of the potato cooking water instead of adding milk to mashed potatoes. It adds the moisture and along with butter or Butter buds for flavor, it is delicious. To use stronger onions, just saute them before adding.
