How would you do it without the middle buster? Use a fork to dig them up?

Yes, Digging fork. That is also how we harvest all the new potatoes.

Forgot to tell you I saw your video from last year and copied what you did with some rainbow fingerlings. I will never grow full size potatoes again. I am able to get two successions of potatoes this way and to be honest, you can sell the small ones for more!
