I did a tea party for my Nana and 14 of her friends. It was more English tea style sandwiches and scones. I had decorated boxes so each guest could take home the cup & saucer they chose along with 'leftovers'. She was the reason I went to cooking school. This summer I'm doing a tea for my mother, but with Thai, Filipino, Japanese dishes. I'm so happy you did this video as it has helped inspire me as I wasn't sure what to make.

For the authentic Filipino tea experience, you can try Salabat (ginger tea) or hot calamansi tea with honey. You can even combine them 🙂 For coffee, try Kapeng Barako.

  • @MasterAttendant

Wow looks great! The only change I’ll make is to switch out the black tea with Salabat (ginger tea) to really make it the full Filipino afternoon tea experience.. We make our Salabat by boiling chunks of ginger and straining it, we sometimes boil the ginger with sweet potatoes, to cut down some of the gingery taste, it’s really good highly recommend if you haven’t tried it..

Another additions would've been puto seko and pulvuron. Those would've been nice pair with tea. As for rice snacks, ampao would've been nice. Instead of cooking it the traditional way, use the "fancier" caramel where you add butter and cream/milk. Then sprinkle flakey salt on top.
Another rice snack would be rice puto. Instead of all purpose flour, use rice flour. The taste is different from regular puto. You can top it off with Eden cheese or salted duck egg slices and/or you can also make a version where you put custard or flan on top. You can also flavor the puto differently tho the combination with salted eggs is best with plain.
Suman is another rice forward dish. Make the balintawak suman. I'm not familiar with how suman is cooked but this one is white and purple rice inside. The white is more neutral while the purple (definitely not ube, just purple rice), is sweeter. You can top this off with latik.
As for sandwiches, I don't think there's a lot of original Filipino ones. We just add whatever but there's a popular one in our province called "new york" or "new york sandwich". Basically, just a piece of sliced bread, flattened. Put hot dog and eden cheese or whatever. You can also spread lightly with a sandwich spread. Roll it into cylinder. Make sure it does not come undone. Dip in egg, then in panko style breadcrumb. Fry. I think this can be fancified by using other meat, maybe some vegetable cut into thin sticks and not-processed cheese.
I think using a traditional pandesal for sandwiches would make it very Filipino. Besides the sardines (usually fried with eggs into an omelete/scramble), we use corned beef too.
Another pandesal idea is to cut them horizontally, spread star margarine on top and sprinkle some sugar and toast them in the oven. Our neighbor used to sell these and they're amazing. Sweet and slightly salty and crunchy. The pandesal can sometimes brown a lot but I like it.

I’ve had experience making the menu for afternoon tea! I really wanted the cucumber sandwiches (cuz I never get them anywhere else) so I made that as well as my chicken sandwiches and strawberry sandos! We also ordered a cake, I made biscuits (because I prefer them and it’s easier to pop in the oven) and we had 3 kinds of tea! Tho most everyone preferred the nice loose leaf I bought for the occasion! Definitely a lot of work but I had such a good time I’m willing to do it again!

Oh that salt egg one is amazing. Highly recommend Charlotte’s Lively Kitchen blog coconut scones. They are incredible. Your sweets are so kawaii. 1st Reaction = FILIPINO Style TEA PARTY!!! Now that's creative. 👏👏👏
2nd Reaction = why not SLICE the bread edges BEFORE adding the spread etc? 🤔Less waste ...
Next Tea Party = yes, a more RICE-centric theme would be unique. Lots of possibilities = Sweet + Savory + Spicy varieties, like suman, malagkit, biko, for starters. 👍🏻
More ideas = using Saltines, Graham and other CRACKERS instead of bread.
    Good job, Jeanelle!
