Early in the morning, Ravindran Nair takes a ritual dip in the temple pond, its reverberating chants punctuating the sounds of dawn. He then gets to work, milking his cow, setting up his woodfire stove and loading a giant boiler. At his nameless, but widely known shop somewhere in the bylanes of Thiruvananthapuram, something special is brewing. For over fifty years, Nair has served his signature one metre chai here, pouring the tea from spectacular heights to create a much-loved layer of froth. To the customers that stream in day after day, the genial Nair doesn’t just serve chai and snacks - the metaphor for much needed repose in the work day, but sipsful of smiles.
