    INGREDIENTS
    1 cup white wine
    ¼ cup lemon juice
    1 cup heavy cream
    1 cup parmesan freshly grated
    2 tablespoons capers drained
    INSTRUCTIONS
    In a saucepan over medium heat, bring white wine and lemon juice to a boil.
    Reduce heat to low and stir in heavy cream. Reduce for 5 minutes.
    Remove from heat and stir in parmesan and capers.
    Toss with pasta or vegetables or drizzle onto chicken, fish and more.

    SUBSTITUTIONS
    White Wine - A dry white wine including Sauvignon Blanc, Pinot Gris and Pinot Grigio or white cooking wine.
    Lemon Juice - Fresh is best, but you can substitute 100% real lemon juice found in the produce section of your grocer.
    Heavy Cream - Adds a little richness to the sauce. You can substitute half and half if needed.
    Parmesan - Fresh grated parmesan thickens the sauce and adds a hint of flavor. You can substitute pecorino romano or asiago.

    Made it tonight, was a hit. How do you keep from curdling? Low heat?

      Yes, low and slow will help prevent curdling :)

      you can also try adding just a touch of starchy pasta water to prevent curdling.

      @@JulieBlanner Thanks Julie I made the sauce last night. My husband loved it but I thought it was a little grainy. Not sure if it was from the parmesan or what but the flavor was there.

      @@JulieBlanner I was really appreciative of this because I got fired from my job before they trained me how to make this sauce. They probably stole your recipe. They serve it at casa Santo Stefano in ybor city, Tampa, Florida.

    Question if someone is lactose intolerant or health issues and can’t do the heavy
    Cream is there a substitute that can be used?

      Unfortunately I haven't tested dairy free alternatives. Have you tried my white wine sauce? You can make that and substitute capers for red pepper. Enjoy!
