✅ Unbelievably Creamy! Pistachio Ice Cream

    This is the most decadent Ice Cream recipe that we make... Well this Unbelievably Creamy Pistachio Ice Cream is worth the time!
    Ingredients::
    1 cup (250 mL) shelled pistachios
    ¾ cup (175 mL) sugar
    2 cups (500 mL) 35% cream (AKA whipping cream, or heavy cream)
    1 cup (250 mL) whole milk
    Pinch of course salt
    6 large egg yolks
    1 tsp (5 mL) pure vanilla extract
    ½ tsp (2 mL) almond extract (pistachio if you can get it)
    ¾ cup (175 mL) shelled pistachios (to fold in at the end)
    Method:
    Grind the 1 cup of pistachios in a food processor until fine-ish, but not to a paste.
    In a medium pot, warm the milk, sugar, ½ of the cream, salt, and ground pistachios - stirring to dissolve the sugar.
    Remove from the heat, cover and let steep for about half an hour.
    Strain the pistachios from the cream mixture, pressing on the nuts to extract as much liquid as possible.
    Discard the nuts - although we re-use them in favourite cake recipe.
    Return the cream mixture to the pot.
    In a separate medium bowl, whisk together the egg yolks then slowly pour in the warm cream whisking to temper the egg yolks.
    Pour this back into the saucepan, and place over medium heat.
    Stir the mixture constantly scraping the bottom as you stir, until the mixture thickens and coats the spatula.
    Pour the custard into a bowl and stir in the remaining cream, vanilla and almond extract.
    Cover and refrigerate until cold (over night).
    Pour into an ice cream maker and freeze according to the manufacturer's directions.
    Once finished churning, fold in the ¾ cup pistachios.
    Makes about 1½ quarts

      @@sulakshmisarkar8514 The pistachios aren’t ‘wasted’ - all of the flavour is In the ice cream. Thee is no flavour left in the nuts at all; they are tasteless mush when I remove them. If you leave them in it will actually detract from the ice cream.

    My twin and I made this for our birthday last year, and I must say it was one of the best ice creams I've ever tasted. We made a few adjustments and added extra nuts- a mixture of both pistachios and almonds. Yum!

      Forgot to ask, would this recipe work with other ingredients? Say, lavender flowers instead of pistachios?

      Yes - definitely. You can take this base recipe and try it with all sorts of additives and flavours. It will take some experimentation to get the combos just right; but well worth it.

      Thank YOU Sonja for mentioning the Keto version. I'm on keto, and have been using the mason jar shaking method, then remembered that I had the exact ice cream maker but its electric. Did you use the exact recipe given here, but substituted Stevia/Erthrotol? Here in the future, 2021, we have a product called Allulose as another type of sweetener, and it works better with ice cream. Thanks again.

    I was just browsing through Glen's most viewed uploads, and I came across this. I know that this channel used to not have any human voices or faces, but this is the first time I've actually SEEN on of those videos. I must say I'm glad Glen moved to the more him-centered format.     Looks great, but a pistachio infusion isn't the best way to get flavor into the ice cream. Would have been better to mix the pistachios to get a paste and integrate it into the ice cream base...better/stronger flavor and less waste...win-win!

    That ice cream looks so decadent, creamy , delicious & yummy. I have a question though, would putting in fresh pistachio nuts to fold in at the end, make the ice cream hard & really crunchy.My teeth I think couldn't cope with biting through those nuts :P :D

      Two things Oliver; It’s called editing. I edit out the bowl scraping or do it ‘off camera’ in order to keep the videos relatively short.
      Second; the -pistachios have no flavour left in them. None. Zero. all of the flavour has been transferred to the ice cream mixture. They are flavourless and have the texture of mush. leaving them in would just make an ice cream with terrible texture.

    I made it and it is sooooo great and I can’t understand the people keep asking why not using the pistachio from beginning. It’s just too soft and too sweet to use also the Texture is totally different. For myself, I hate soft nuts.

    Is it okay if I use the pistachios which were used for flavoring the cream? They're very sweet and I don't see why I can't toss them into the ice cream

      If you don't think you can find a use for them in the next couple of days (cake etc), then by all means leave them in the ice cream. It's just the difference between an awesome bowl of ice cream, and a mind blowing bowl of ice cream.

      +LiLo i just make this recipe half and hour ago, and yes, the pistachios that you used in te beginning after flavouring the cream went very soft and with not same flavour , BUT , don't throw it away, use it next day on your toast :) :)

    I made this recipe and used the ice cream maker to churn it. Both the custard and ice cream bowl were cold. Ice cream bowl was in the freezer overnight. But it did not form ice cream texture after the recommended churning. It was quite liquid. What did I do wrong?

      You probably did nothing 'wrong'. We've tested many home ice cream makers, most of them are... garbage. they just don't have enough 'cold' to actually freeze the ice cream. If you are somewhere hot, and the temperature outside is high, you may also have trouble freezing it. We have that trouble here in summer.
      You'll just have to take the mostly frozen ice cream and put it in a cold bowl and into your freezer. Keep stirring it every once in a while, and it'll work out.

    I was surprised to see that all of those delicious, healthy and expensive pistachios in the pot were not used in the ice cream. If they were not used for other purposes then that is incredibly wasteful.

      @Thuy - by the time the pistachios came out of the pot... they had given all of their flavour and goodness to the ice cream. They are at that point flavourless and lack any sort texture or flavour. We got everything out of them, what was thrown away was useless.

      If your ice cream maker is strong - then it doesn't have to be overnight. But we've found most ice cream makers for home use to be... weak at best.

    here is a hint.. when you see someone heating the cream, they dont know ice cream. heating the cream breaks down the fat and you dont want to do that

      Oh @mikeg3281 You really have no clue.
      Heating the cream changes the protein structure; which gives you a creamier end product. It does absolutely nothing to change the fat structure.
      It's also a technique used in ice cream making since the very beginning of ice cream. Have you ever had a custard base ice cream (I bet you have and thought it was the best you've ever eaten); those don't exist with heating the cream.

    I tried the recipe and took the same measure instructed yet my ice cream maker stopped after 30 mins as ice cream became so thick to get mixed further. I have Unold Eismaschine Gusto 48845. I took it off after 30 mins and tasted it. The taste was so good but it was suppose to be in ice maker for 60 mins. I wonder what went wrong. Please guide me and thanks for the recipe I would love to try again hopefully next time with adding some more milk or cream or not chill the container? As manufacturer does not say to use cold container and make ice cream?

      symna Sometimes it won't take as long to freeze into ice cream as the manufacturer says. If it was frozen & thick after a half hour - we don't think you did anything wrong.

      How is using 6 egg yolks 'wasting' them? You're going to eat it right? In the end if you use three, the texture will be grainier / bigger ice crystals.

      We're not sure what all purpose cream is? Could you explain? This recipe needs cream that has 35% fat content.

      LOLZ - you don't 'make' cream, you buy cream.... and the written recipe both below the video and at the end of the video are pretty specific that you want 35% cream - in some countries it's called whipping cream, or heavy cream, or double cream - so we give the fat % so you can get the right one.

      Fat and sugar is important so make sure to follow the recipes. A spoon of liquid glucose is also good for preventing ice crystals and makes the ice cream more stabilized. These three things i mentioned should be enough to not have any ice crystals or anything like that.

    What cream do you add? Is it evaporated milk or salad cream. I am confused, please. Show the name so that i can buy one. It does not make your teaching complete...my opinion, pls.

      Hey Ziggy - So sorry that you were unable to find the full recipe at the end of the video and under the video in the info section. We use 35% cream, also know as 'whipping cream', or 'heavy cream'. Hope this helps!

      Don't think of it as eggs in ice cream - It's really a frozen flavoured custard. Do you like pumpkin pie? Sweet potato pie? Those are just flavoured custards.
      You'll never taste or even know that the eggs are there; but if you leave them out, you'll know something is wrong.

      Thanks for the advice "bruce e"... We have and use 8 different ice cream makers in our recipe videos, electric churn, electric with built in freezers, etc, etc. The one we love best - is the one in this video. It's quiet, it's relaxing, it freezes the fastest, and makes the creamiest ice cream. Back in 2010 when we bought it, in 2013 when we made this video, and in 2017 as we type this - hands down the best ice cream maker out there.

      I just bought one off QVC uses Thermo-Electric Self-Freezing technology. I had one with the freezer tub but never had room in the freezer for it.

    Not recommend for Cardiac or high cholesterol people because of using Eggs
