    What I learned about true Italian pizza:
    1) the dough is very thin and light and easy to digest
    2) the sauce is light
    3) there is very little cheese and it is rare to put anything besides mozzarella on the pizza such as grated peccorino
    4) always finish with basil and olive oil
    5) the wood ash flavor is an important part of the flavor
    6) it should not be greasy
    7) most pizza is margarita without toppings

      True! It's pissing me off that there's no way I could find a pizza like this in any pizza chains because their doughs are so thick! Those are great too but these seem so imperfect and homelike!

      You can put pecorino on Margherita pizza, it gives it a little extra kick. We do the same in NYC. Margherita pizza has to have fresh lite sauce and fresh mozzarella with a chewy crust made in a coal or wood fired oven. The New York slice has aged mozzarella and a heavier sauce cooked for longer in a commercial oven. It’s bread is crisp and thin. Totally different concept. You still have Sicilian pizza and Roman Pizza alla pala.

    I didn’t have a pizza made by actual Italians from Italy until a couple of years ago. It changed my life. I could live off Italian pizza. When we can all travel again, I’m going to Naples

    There's something so pretty about the imperfections on these types of pizzas
    Like, it looks so good with such a low amount of stuff on top. No fried dough, no pineapples, no barbecue sauce, no random ingredients

      Eeks. Papa Johns pizza is absolutely terrible! I tried it one time because I had a coupon, and I instantly regretted it upon tasting their pizza. Dominoes is “meh” at best. It seems like you have never been exposed to an actual pizza that is good quality, with not only quality ingredients, but reflects authentic Italian or New York recipes and cooking techniques.
      I had finally found one of the best pizza joints here in Southern California a few years back, and it was miles better than every other chain pizza restaurant you’ve heard of. I can’t even describe just how utterly depressed I was when they changed owners (the original owners retired)… The food the new management makes is just not *nearly* as good as what it used to be like with the original owners.
      The only time I am going to taste good pizza again is if I either travel to New York City (been there once, and their pizza/Italian food was out of this world incredible!) or Italy (I’ve never been, unfortunately), _OR_ I make it myself.
      Seeing as I am disabled now and can’t travel anymore because of it, I am choosing to try to make it myself as authentically as I can. I splurged and treated myself to a Roccbox pizza oven, and I can’t wait to try it! Got myself some imported Italian San Marzano canned tomatoes, and everything else I need to make a beautiful Italian pizza. So excited! 😊

      My main point was that I don’t think you’ve tasted better pizza to compare it to, so you don’t know what you’re missing. That’s all.
      One of the things that I hate about big chain pizza restaurants, like Papa John’s etc., is that they make their pizza sauce really sweet. It isn’t supposed to be sweet! Papa John’s pizza sauce was definitely very sweet. : /
      Us Americans are having sugar put into all of our food, and not only is it really bad for us (it is the number one factor that leads to heart disease and diabetes, besides meat), but it destroys the flavor of what many things are supposed to taste like that shouldn’t have sugar in them.
      P.S. Have you had Pizza Hut pan pizza? I don’t know if it is good as it used to be, but I remember loving their pan pizza a lot in the 90s (I never got into their regular pizza though).
      I haven’t lived around one in a really long time though to know if that has been ruined over time.
      Also, Papa John’s is _NOT_ cheap! I remember specifically that it was really expensive compared to other pizza places (which is why I only tried it because I had a coupon at the time). Domino’s is known for being much cheaper.

      Well… It is a bit sad to see that your palate is so attuned to sweetness/sugar in foods that aren’t supposed to have it.
      That, on top of the fact that you like meat so much, is definitely going to shave years off your life by getting one or more of the following:
      Heart disease/diabetes/cancer
      Heart disease is the number one killer in the USA, and cancer is the second. This is 100% attributed to the enormous amount of meat and sugar that Americans consume.
      Just letting you know, because I care about my fellow human beings.

    I've been in Naples 2 years ago and tried pizzas in 8 or 9 different locations. The best was literally in front of our sleeping place (Pizzeria Azzurra at Via Alessandro Poerio) and the worse was mentioned in this video Antica Pizzera Da Michele. There was so many people inside that we had to sit with other couple.
    If you're looking for best possible food just go for a walk and look for the restaurants where local people eat. Not TripAdvisor, not google maps. Local people are the best recomendation.

      Until you get the fact that (and i dont know if this happens over there too) when you go on vacation somewhere its usually what id say 'corrupt' in the form of either people get strongarmed by the underworld or that the people that bring in tourist get a little cut of the things they buy or its a fixed amount (idk tbh).
      I think ive been watching too much television :)

    After doing a small pizza tour in NYC, and being somewhat underwhelmed that not one pizza lived up to the hype, when we arrived in Naples I was prepared to be disappointed. My girlfriend is a very picky eater and in every meal we've ever had together, she is completely in control of stopping herself from eating too much. When we went to La Antica Da Michele we ordered two pies, one of each. As we started eating it, the flavor wasn't immediate, but it builds in you in a manner the way some hot peppers mislead you cause they arent immediately hot but increase in heat as time goes on. This is how I experienced the flavor of the Da Michele pizza's. As we were enjoying it, I struck up a conversation with an Indian couple next to us and they we're having an exact experience in terms of the almost delayed reaction in the flavor. The couple were so enthusiastic and friendly taht I got caught up in the convo of this coincidence of strangers from different countries meeting in a a county not our own and basically finishing each others sentences that when I looked back over at my sweet girl friend, she had this very strange smile on her face. When I looked down at the Margherita pizza 3/4s of it was gone!!! I was certain we were going to have to take almost half of each home because she is such a small eater, We devoured both in what was one of the greatest, if not the greatest, eating experience of my life. And what was even crazier, after ordered 1 beer and one mineral water the total was 15 Euro's! In America, two large, average pizzas, a beer, and a mineral water would run you about 50 bucks, plus tip. Id fly there again just for this pizza (And to try the others)

    I'm Italian. Soybean oil on pizza (Da Michele) is simply unacceptable. Good Extra Virgin Olive Oil does NOT cover the flavours. They chose soybean oil to save money. Ps. A suggestion for all the tourists: visit one of the many other good pizzerie in Naples, rather than these four. These are famous, and you will need to wait in cue for hours for the same quality as many others.

      agree. i just wrote the same thing. soy oil??? In Naples..!! travesty and ruins something healthy (SOY Oil is not healthy!) then in Napoli, using tomatoes from Sicilia or Puglia? while I'm sure they are great, Napoli is San Marzano! the queen of the tomatoes! very odd

      Well in Naples every 10 meters theres a pizzeria as good as the previous. So you can actually taste every pizzeria you want. But Starita is really good.

    I stayed in Napoli for a whole week, and adored all the pizzas all around the City where I ate, they were incredibly good. The Italians are so passionate and cool people. Love to Napoli and Italy, my finest place I have ever visited, and go there again for my 4th time , I can not wait.

      The food culture between here in the states and Italy are quite different. While I was stationed in Italy, I noticed they lived their food. It was an extension of their person. I'm not saying one is better or worse, just noting the passion they have for each and every ingredient. Of course there are examples of Italian-Americans here with the same passion but the culture as a whole is different surrounding the food.

      @@vladimirpoutine7522 Okay but there was a You Tube video on here asking Italians what they thought of the American Pizzas and all of them said they were horrible, which I get as I lived in the States and most of the Pizzas was nothing like in Italy and that goes for other countries too, usually too greasy and stupid ingredients, not to say I got used to them but that is VERY true. Not having a pop at USA they do WONDERFUL food in their own right. The Italians are very passionate about food and the standards are usually high in the sense of tradition. You just can not beat own countries traditions of food, if not Italy, many others too, as found and tested myself.

    I LOVE how every place where they interviewed people it was "like this is the best place in Italy to get pizza" It was interesting to see the different views and tastes. Also amazing how each pizza maker was so passionate in their craft!

      @tubenshaft, service is terrible though in Naples. It´ll take you an hour to get anything. Legitimately took 25 minutes for them to take my order at Gino e Toto Sorbillo. In Milan however I got a pizza within 5 minutes after ordering at Gino Sorbillo.

    Crazy how an authentic, hand-made Neapolitan Pizza only costs 5€, while an average fast food Pizza costs ~$15 in the US. It tastes way worse, but is three times more expensive…

      I think the vast majority of American pizzas taste like greasy, unhealthy trash. I don't know what's in the half of them, but I can tell you for sure the ingredients are not healthy. I had a pizza in Venice and it tasted absolutely nothing like the greasy trash sold in American pizza chains, some chains of which are also here in Ireland.
      I'm from Ireland, and I can tell you from the time I spent in the US, most of your food seemed unhealthy to me. Nothing had only a few ingredients on the label. The stuff tasted "off" and by the ingredients list suggested I knew I had no idea what I was eating. Your sliced bread was the weirdest "bread" experience I've ever had-it tasted like poor quality plastic Madeira cake. It scared me that Americans eat this stuff. It's so easy to get far cheaper, far superior quality food in Ireland, and in Europe. In the US you go to an indoor food court and you get a strong whiff of artificial flavour enhancers. An odd sugary saccharine MSG aroma. Bizarre. There are Neapolitan pizza places in the US, but I wouldn't imagine there are many, and there are no real Neapolitan pizzas found in chain stores. You need to find that special pizzeria and stick to it. I imagine there are many imitations that cheapen many aspects of the pizza, down to using the wrong (cheaper) ovens and wrong (cheaper) wood. Accept no substitutes.

      You don't need to chew Neapolitan pizza that much, it basically melts in your mouth with tomato, mozzarella, olive oil and basil mixing up, especially at Sorbillo's and in the tip of the slice.
      It's just heavenly

    I just recently got back from Italy. I was addicted to Gino’s while staying in Naples. Went for 2 days in a row for lunch and could’ve done it 3 if we had an extra day. It truly is something spectacular.

    its also interesting how around the world we have so many types of pizza with 1001 toppings, and in actual Italy where pizza originated, its actually just a few ingredients to make a good pizza. I would love to go to Italy someday to try them for myself - i'm so used to having so many toppings its hard to believe a pizza can be good with just dough, tomato sauce and cheese.

      a pizza in Italy vs the things we call Pizza generally in the USA (not including authentic Italian pizzeria we have) is not the same. in any way. pizza in Italy is light and fresh and gives you a tingle like an orgasm of the senses. it is so good. when made with the Italian ingredients that taste so different than commercial ingredients.

      wait wait wait. This is "Pizza Napoletana" it's a type of Pizza invented in Napoli. The Pizza Napoletana is a Traditional Speciality Guaranteed by the law of the EU and UK and has only 2 recipes: Margherita (tomato, mozzarella, basil, olive oil) and Marinara (tomato, garlic, oregano and olive oil) and specific dimensions and thickness.
      But there are other types of pizza, there is the "pizza bianca" (white pizza, without tomato), the "pizza fritta" (fried pizza), the "calzone", the "pizza romana" (Roman pizza), the Sicilian Pizza, the Genovese Pizza, etc... and there is the "pizza al taglio", "pizza alla pala", pizzas with different flours etc... The best pizzeria in Italy (for 50 top pizza and the Gambero Rosso guide - the Italian version of the Michelin Guide) is in Verona and cook Gourmet Pizzas like "pizza with red shrimp sashimi" or "pizza made with corn flour with creamed codfish and spicy caponata" or "pizza with wild skewers, fillet of fassona and bacon of cinta senese".
      In Italy there are some dozens of traditional toppings, for example:
      Diavola - a Margherita with pepperoni

    I love the dough, the sauce, the cheese, basil leaves, the earthen oven and wood fire, everything about Naple's pizzas. Just wish i can go there to try it right away, or maybe they can bring it to Mississauga, Ontario, Canada one day.

      I had finally found one of the best pizza joints here in Southern California a few years back, and it was miles better than every other chain pizza restaurant you’ve heard of. I can’t even describe just how utterly depressed I was when they changed owners (the original owners retired)… The food the new management makes is just not *nearly* as good as what it used to be like with the original owners.
      The only time I am going to taste good pizza again is if I either travel to New York City (been there once, and their pizza/Italian food was out of this world incredible!) or Italy (I’ve never been, unfortunately), _OR_ if I make it myself.
      Seeing as I am disabled now and can’t travel anymore because of it, I am choosing to try to make it myself as authentically as I can. I splurged and treated myself to a Roccbox pizza oven, and I can’t wait to try it! Got myself some imported Italian San Marzano canned tomatoes, and everything else I need to make a beautiful Italian pizza. So excited! 😊

    PRO TIP: To avoid the big lines at Da Michele, go straight to the door and order take out. It takes 10 mins max vs waiting more than an hour in line. I've been to Da Michele multiple times and can honestly say it's the best Neapolitan pizza I've had. The smokey taste and fresh ingredients gets me every time, can't get any better than this honestly.

    Ive been eating so many pizzas in many different countries. I can tell you for sure that the naples pizza is by far the best, solidly because of the reason that they keep it very basic and use the best ingredients possible. From that day on I started doing pizzas myself because I dont like how pizzas are made in my country and I dont get really satisfied by them.

      @@mac2k2020 I'm from Caserta, near Naples. I tried pizza in France, But also in Milan and Sardinia ... I guarantee you that it is becoming a battle to find a pizzeria that satisfies me like the one in Campania. It is not a thing of presumption But of tradition. If a certain food has a place of origin, clearly that place of origin can do it better, it obviously depends on the dish, but that's the way it is for pizza. Then if it is a matter of tastes it is another thing, but tastes do not change the facts.

      Yeah, I've been in Naples this May and I tried a bunch of pizzerias (all of those in the video plus some others). My favourite was from Sorbillo, the tomato sauce was incredible and that olive oil on top mixed with the tomato flavour perfectly (that was a top notch quality olive oil, could tell immediately), on the other hand Da Michele was at the bottom of my list, still an incredible pizza. You simply can't find a pizza like that outside of Naples but it was the one I enjoyed the least, even if I enjoyed it a lot.
      I guess the olive oil played a big part on my rankings. Probably it comes down to personal preference but the Sorbillo one was mindblowing

    Those 4 for sure are among the best in the world, but probably the best of all in this moment is near Naples (45 minutes by car, more or less) and is called "Pepe in grani". You should try it.

    I have visited my three italian cousins 10 years ago in Naples....and I guess there was a reason why they only wanted me to taste the Pizza in the Starita. It was pretty awesome, first you have to tell your name and then you will have to wait ca. 2- 3 hours till they call you in. But waiting time was pretty much fun, we had a couple of beers and the stuff served small pizza snacks for the hungry waiting crowd. Everything was served super fast and it was so delocious. I also can remember a desert, some thin baked pizza dough stripes with Nutella on top of it. If you have finished your meal, you immediately have to go and make room for the next waiting person in line.

    Italian Regina style pizza is so good… the dough is light airy and easy to chew, the pizza is plenty saucy which I love, the pizza is paper thin, and the cheese is more flavorful than what you get in the states

    I will go to a town that's 1 hour from Napoli Italia, to go to a pizza restaurant that's typically obscure, but has some of fascinating pizza menus yet more delicious than of Napoli pizzaiolo that appeared in this video

    I once as a kid had pizza in italy from some very old authentic place. Don't remember the name unfortunately. But it was so damn good, i was like 10 but i still remember it as the best pizza i've ever had and even on of the best foods overall i've ever had. If i eat pizza now, i get it from an Italian restaurants nearby and it's great pizza but nothing has been able to replicate that pizza in italy yet for me. I really want to go their again sometime soon. My sister who is older has the same thing as me, we don't remember much from the vacation but we both do remember the pizza haha.

    I’m impressed by these prices, the exchange into CAD is by far better than getting a pizza from your local pizzeria, that’d cost $15.99 for a large, and $2.50 to $3.00 more for each topping added on.

      Dayum, here in the south of italy that's standard, in some places you can get a marinara for as low as 3€ and it's just as delicious, making people pay more than 5€ for a margherita would be considered outrageous, exept if it has something truly special

      in New Jersey, a pizza of the same size, called Neapolitan pizza, (not typical American pizza) here goes for $20 and up.

    I live in Australia and we are obsessed with things with 'the lot'... There's a place here that stacks ingredients so high that it might as well be a Chicago deep dish! But with normal pizza base! It gets a bit soggy is the only problem!
