I'm Australian and even Koala which is our national animal is trademarked but not by an Australian but by a American. Like who gives someone the right to say they can trademark such a name? And where does the money go that these people are paying to trademark such names like Koala.
I'm not sure what you mean by that? You don't need to be using your trademark in commerce to file an application. But a trademark lawyer can be helpful to make sure your name is actually available before you start using it.

So if I wanted to use a phrase to put on bumper stickers, clothing, leather wallets, golf balls and mugs to be sold on a website this would be 1 application filing fee plus each nice categories 16, 25, 18, 28, 21 and a fee for each?

Because all words are made up, even the names we give animals.
