I was doing AP at my old job entering the invoices and I enjoyed it. The only thing I didn't have to do was reconciliations because I worked alongside of the accounting department and someone on that team handled that. So the issue I'm having now in getting a job in AP, is I'm finding what you would consider an entry-level job a lot of companies are combining a lot more tasks that are accounting heavy into that role which may rule you out if you don't have an accounting background...
correct! just because 70% of this role is handling administrative tasks such as reconciling, filing documents, verifying documents and storing the processed/paid documents doesn't mean that this role doesn't need any analytical and high accuracy aspect. in the real field, AP team also needs to deal with some accounting policies to do their job. if you don't really have any accounting background such as taxation, journalizing and other accounting's natures, it will simply lead you cause some fatal errors at the end of the month. so this role specifically needs to be dealt with the people who absolutely have a deep knowledge in accounting.

Interesting, I have seen vacancies for accounts payable positions, but didn’t know where it tied in with bookkeeping. I imagine large businesses who purchases alot on account would hire an accounts payable specialist
