- For Veg Noodles-filled Chinese Samosas, you'll combine the deliciousness of Chinese-style stir-fried noodles with the crispy, flaky texture of samosas. Here's a recipe to guide you:
Ingredients:
#### For the filling:
1 1/2 cups cooked noodles (preferably boiled and drained Hakka noodles or any thin noodles)
1/2 cup finely chopped cabbage
1/4 cup finely chopped carrots
1/4 cup finely chopped bell peppers (optional)
1/4 cup finely chopped onions
2-3 tbsp oil
1 tbsp ginger-garlic paste
2 tbsp soy sauce
1 tbsp vinegar
1/2 tsp red chili powder
1/2 tsp black pepper
1 tsp sugar (optional, adds sweetness to balance flavors)
Salt to taste
1/2 tsp Chinese five-spice powder (optional)
1-2 green chilies, finely chopped (optional for extra heat)
Fresh coriander leaves, chopped (for garnish)
#### For the samosa dough:
1 1/2 cups all-purpose flour (maida)
1-2 tbsp oil or ghee
A pinch of salt
Water (as needed)
Oil for frying
Instructions:
#### For the filling:
1. **Prepare the noodles**: Cook the noodles according to the package instructions. Drain and set them aside to cool. Once cool, you can chop them into smaller pieces to make them easier to stuff into the samosas.
2. **Stir-fry the vegetables**: Heat 2-3 tbsp of oil in a pan over medium heat. Add chopped onions, green chilies (optional), and ginger-garlic paste. Sauté until fragrant and the onions are soft (about 2 minutes).
3. **Add the other vegetables**: Add cabbage, carrots, and bell peppers (if using) to the pan and stir-fry for 3-4 minutes. The vegetables should remain slightly crunchy.
4. **Season the vegetables**: Add soy sauce, vinegar, red chili powder, black pepper, Chinese five-spice powder (if using), and sugar. Stir to combine. Let it cook for another 2 minutes.
5. **Add noodles to the mixture**: Now add the cooked noodles into the vegetable stir-fry and toss everything together so the noodles are coated with the sauce and veggies.
6. **Final seasoning**: Taste the filling and adjust seasoning with salt if necessary. Garnish with fresh coriander leaves and remove from the heat. Let the mixture cool before stuffing into samosas.
#### For the dough:
1. In a mixing bowl, combine flour, salt, and oil or ghee.
2. Gradually add water and knead until the dough is smooth, stiff, and elastic.
3. Cover with a damp cloth and let it rest for 15-20 minutes.
#### Assembling the samosas:
1. Divide the dough into small balls (about the size of a golf ball). Roll each ball into a thin oval or circle (about 4-5 inches in diameter).
2. Cut the circle in half to form two semi-circles.
3. Form a cone by folding one half of the semi-circle, sealing the edge with water.
4. Stuff the cone with the Veg Noodles filling. Be careful not to overfill it; make sure it's packed tightly but not overflowing.
5. Seal the open edge of the cone by pinching the edges together. You can fold and press the edges to form a neat shape.
#### Frying the samosas:
