Hi there, I have tried to set up a custom conversion which is always greyed out. If I try to add the customer conversion under aggregated events, it does not show up. I see only the event which already activ. I am only able to add custom conversion but no pixel/event ...why that. Thanks so much for you help!!
I'm assuming you see this message under Aggregated Event Measurement. Check your website with PixelHelper Chrome extension. Do you see events? If yes, wait for a few hours and refresh the AEM page. If there's little traffic on the website or no transactions, do a test purchase yourself to fire the events.

That yellow exclamation mark is usually a warning about something and you should be able to see some more info.
Will setting up API be ideal once the IOS changes go into effect?
API is useful even now, it helps with ad blockers and browser privacy settings.

Hard to say, maybe the Custom Conversion doesn't fire for some reason. You can check it with Pixel Helper chrome extension.
I'm only getting up 1 event and that is "View Content" why is that? Is it because I have a new and unused pixel?
Yes, that's probably the cause. It's a good idea to fire (and test) the events yourself. Do a real transaction, and try again after 30 minutes.
