Dexter vs Jersey Steak: Sous Vide Cooking: Blind Taste Test

  • In this video we compare Dexter Steer steaks to Jersey Steaks. Both are rib steaks cooked sous vide to 130 degrees F. Then seared on the pellet grill! Can we taste a difference?

    About Sweet Briar Farm
    We are a small farm located in Central/Northern Michigan. We farm every inch of our 6 acres. We breed Registered Dairy Goats, Dexter Cattle, and Heritage Hogs. Clean healthy food is important to us and we like to produce the majority of our food on the farm and we grow and raise enough to sell to local customers. Producing our own food also means we forage for wild edibles such as mushrooms and tap our maple trees in the spring to make maple syrup. In 2019 we added honeybees to the farm and have had as many as 30 active hives producing honey for us.
    Our goats include Nubian goats, Mini Nubians, Fainting Goats, and Nigerian Dwarf goats.
    Our Heritage Hogs include: registered Berkshires, Tamworth, Kune Kune, and Hereford.

    I love your side by side blind comparisons. A few years back I grew 1 bulbs worth of 9 types of garlic with the plan to compare them and decide on one or two that I prefer. Well… Several years later I’m still growing 9 varieties of garlic. LOL. I’m up to 60 bulbs I just harvested and am currently drying. I never did the side by side comparison… I just enjoy them all. 😂

      Variety is the spice of life right? I don’t think it’s any extra work to plant multiple varieties of garlic is it?

    Full size Jersey or Mini? Also, could you do a size comparison of Dexter steaks/cuts vs “normal sized” steaks/cuts? Can’t find hardly any videos that compare the size differences. Thx. Love your content

      Full size jersey. That’s a good idea to do a comparison. We can do that this fall. I sold all the dexter beef and kept the jersey beef. I traded a couple jersey steaks for the dexter steaks with my brother who bought a half dexter beef from us.

      @@SweetBriarFarmMichigan awesome! I think it would be great content. I’ve found a few videos that show just the Dexter cuts themselves, but none that show a side by side comparison. We’ve considered getting dexters, but not sure if it’s really worth it. We only have 4 acres

      If it’s any help, we only have 6 acres. We do buy in most of our feed for the Dexters (hay) and micro manage small paddocks for the cattle to graze. They’re thriving very well.
