    My son, Bill, went to gorgeous, tiny, little special needs school for gorgeous special children. Bill and his friends there all need just a little more care, attention, love and guidance to help them access friendships and education. Bill has autism (and a variety of other issues such as Sensory Processing Disorder, ADD, Dyspraxia, Global Developmental Delay and Klinefelters Syndrome) and most of his school mates have similar challenges as well as Dyslexia across the board. Bill's school is woefully underfunded for a variety of reasons that would take pages of text to explain. The teachers aren't well paid yet they are constantly buying supplies the children need that most pupils don't require; such as pen grips and fiddle toys to aid concentration etc...I have been fundraising for a few years now and with your help have managed to help subsidise school trips, buy sensory room equipment, Occupational Therapy equipment, outdoor tables and chairs, a trampoline...and a mini bus!! # billsspecialbus 🤩 All this fundraising helps a phenomenal school that has given so many children a future they would not have been able to access. Thank you so much for any kind of support you give us.

    A few weeks ago, I learned:
    According to my Dad,who spent his adult life as an appliance repair man) ovens (in the US) will range 5°F cooler or hotter than the temp setting. Industry standards allow that much range. You can buy a thermometer to hang on a rack to see what your oven runs up or down of the dial. This is why most recipes will give a range of time to cook things. I learned mine runs 5°F cooler than it says.

    It is derived from the Old English word hléow which means sunny or warm, which evolved into the Middle English word lewk. The word luke was once used on its on own to mean warm, and this use survives in the word lukewarm.

    Balance Gayna is the key to that ‘blah’ feeling. If I ever feel like that I usually just do the jobs that absolutely need to be done and then I do something fun, usually getting out into nature. I know how you feel though. We have been waiting for grass to be laid by our landlords for 18 months so I have a front yard full of sand and it is constantly in the house. It drives me crazy. 🤪🤣😂

    Hi from Vic! When I feel like that, I take a “mental health/recharge day. I get out in nature, knit, or read- or nap. After that, you’ll get more accomplished on the following days!

    I'm sorry you've hit that wall, Gayna. For me, I've found that being out in nature recharges me. Taking a day off from EVERYTHING and indulging in whatever I want to do, whatever I want to eat, or wherever I want to go helps me also . It's not easy taking care of a family and your home, and still find time for you.
    I loved seeing Bill cook the meal...he did a great job!!

    When I hit that wall, I just make myself a cup of tea and knit. The dirt and laundry aren’t going anywhere and it’s going to be a better day tomorrow. Or I sometimes give myself an assignment of working for an hour and resting afterwards

    Try to do the dog walk the other way round. Wow, how do I say that in English? 😂 just start the walk in the other direction, start at your typical end. Things feel totally different when you simply change the direction, even the streets you walk or drive every day feel new. Little trick, but it works 😘 little virtual hug for you!

    What I do when I hit the fatigue wall is either get in my craft room Audible. Or TH-cam & sometimes knit or just lay on the bed ( single ) for occasional guests or take the dogs 2-3or maybe 4 if I have holiday fur baby to my favourite walk with drink bottle or flask sit on my favourite bench & yoga breathing (sigh sit/stand stare cloud watch dogs snuffle about ( they used to my routine indoors or outdoors it’s my well being space just for me start to finish is maybe 1 hr or maybe more best medicine 😉
    You have tenacity to try crumpets again first is always the worst the bread looked amazing yummy

    I could be wrong with the crumpets but is it to do with the amount of dough that went in? I think I heard a mention that it was 2 tblspn's worth in each ring and the amount spooned in looked closer to 6 tblspns or even a bit more. It said they expanded quite a bit so not to overfill and if there was too much in that would have stopped the centres cooking. Hope that's helpful somehow!

      Yes you may be right! I did over fill them and that would have made them stodgy. I’m glad you pointed that out because I hadn’t made the connection. Thank you! I am yet to give it another go but I’m going to slip a bit in the recipe book to remind me. Xxx

    I think its a sign we need to rest. I still do the essential jobs, and know I'm not going to enjoy it for a bit but that will pass. Acknowledge it not try and make it be different. This too shall pass xx

    Try making them in the cast iron pan! That’s what finally worked after a few fails with my attempts to make crumpets.

Again, just watched an older video, of yours, and you won me over completely, when you mentioned you were listening to PATSY CLINE,i have been a fan of hers forever, and did you know her CRAZY song she recorded was written by willie Nelson,another favourite of mine.she would always put me in a good place,music does that don’t you think.     I made a weekly rota for the others in my family to share the general chores. Days of week down one side x name of chore across the top. Coloured dots to denote the person carrying it out. Simple but it worked.

    Laundry room looks wonderful. The bread would be good toasted if it didn't all get eaten, love homemade bread toasted. Way to go Bill cooking the family meal. Margot looks gorgeous after her grooming. We used to have a miniature poodle and he looked beautiful after his grooming even to little bows on top of each ear despite the fact that he was a boy! When we got him home he would race around shaking and shaking his head sideways trying to get them off. Always had to keep him inside to stop him from finding "dead hedgehog"(smelliest dirty whatever) to roll in !!!

      Fortunately Margo likes to be clean so she doesn’t roll in smells but Bunny does. She is a terror for finding fox or badger poo and smearing it all over herself. Sadly the bread was bad even when toasted 🥺 I’ve made another loaf (yet to bake it) and have hopes it will be better this time x

    hump time? I have a nap, 20 minutes love it. With the crumpets,,, sourdough discard makes the BEST crumpets, Yours may be soggy in the middle, but you forgot that crumpets are usually toasted before eating, which would dry them out a bit more, Never mind, the hens will convert the fails into fabulous little offerings for you

    You cannot be Superwoman all the time dear Cuckoo!. I love the cooking with Gayna and I think we can all relate to our cooking not turning out as we expected it to. Sometimes though, if it does not look picture perfect, it may still taste good. I have to admire your patience with sour dough. I hope Bill's meal was fine. With reference to feeling like our got up and go has gone, it will quickly return. I sometimes lose my interest in crafty hobbies but it passes very quickly thankfully. See you tomorrow lovely lady.     Gayna, if you're doubting whether a loaf of bread is fully baked, I highly recommend using an instant read thermometer to check the internal temp. I bake probably 10 - 20 loaves a week and often use one. My optimum internal temp is 190 F.

    Hi Gayna, like you I hate food waste. If I have any bread which doesn't rise well, scones which go a bit stale etc I pop them all together in a bag in the frezeer and every few weeks I make a big bread and butter pudding. Pretty much anything seems to taste good when made into a pudding!

    Feed the crumpets to the chickens, we also feed our peeling from veggies, but not potatoes or onions

      Oh I thought they could have cooked potato peels but can’t have breast things because it clogs up their crop and gives them a condition called Sour Crop. I’d better go and reread what they can have! I don’t want to feed them potatoes if it’s bad for them 🥺 xxx

    I’ve had a very difficult stressful week!
    My husband’s cousin who lives alone was admitted to hospital with a perforated stomach ulcer and sepsis- he’s now improving but has demanded he leave hospital and is now home!
    Back to the tip at home he’s a hoarder from hell and Refuses any help ! 🙀😳😩
    I can’t cope with that! He ties the whole family up in knots with his excuses! He says he likes living in squalor! 😳
    Ps he’s a millionaire because he’s never spent a penny! Just retired 6 months ago!
    I have fibromyalgia and ME chronic fatigue but struggle but never give up I have to rest I wish I had more energy I used to be like you always on the go!

      Hello! I can point you in the direction of a few people who do sourdough very well. Mine is still hit and Miss so I’m not ready to share, I don’t think it would be fair to pass on my bad practices 🤪 check out Bake With Jack, Farmhouse on Boone, Elaine Foodbod. I have tried all of their ways and each time I get an improvement but I’m yet to find the key to my own best loaf x

    Hello Gayna, I have been popping in on your life for at least a few weeks now and I figured I had better stop being so rude and say G’day. I am chatting to you from Aus, down the bottom in Smellbourne, it's not really smelly…unless you get too close to the city. I wanted to thank you for the reassurance that although I’m a good cook I know now I am not a total failure for all the ups and downs I have had with sourdough. I have been an avid cook all of my adult life, and that's while…but sourdough has remained my biggest challenge. I have been baking sourdough for the last 10 years, 8 of them without the internet. All I had was this ragged print out of how to make 4 loaves of sourdough and how to create a starter. It was written by a baker for the average housewife. I got it off the internet in about 2010, before tossed that world away for a while. I digress, but I have made multiple notes, weighed everything down to the last gram, turned ovens up and down, used ice cubes and steam trays, preheated water, used cold water, used spray bottles, added salt, omitted salt, sugar and no sugar, very wet doughs, no so wet doughs….and don't get me started the gazillion scraps of paper I still have on all of the proving methods, the perfect bounce back, the perfect fold. I made some nice loaves of bread but I also made many mammoth bricks and when I made those bricks it was heartbreaking, and I have not yet achieved the perfect loaf. Cooking is something we really depend on and when you put your all into it, and it doesn't work out, it's very deflating, skuse the pun. Then I came back to the internet and discovered in my absence it had become quite a thing…and everyone was an expert at making sourdough …..and I still wasn’t, I felt so dumb. But in hindsight many of those experts also have this thing called editing and they use it alot….thankyou Gayna for your honesty, today I feel a little more normal.
    You asked the question about what your viewers do when we are feeling like you are, I understand that feeling I know it really well. I don’t know anything about what you believe in, but I'm going to say something that scares a lot of people because there's so many fakes out there, but I'm going to say it anyway, because I'm not a fake. I'm a Christian, I’m a real Christian, explaining that's a whole other story, but in short I try very hard to do what Jesus said to do and what God said to do in the Bible, because I really believe in what the Bible teaches and because I know what's written in it is true. So what I do is I pray, and sincerely pray for help, and wait upon the answer to that prayer. I also listen to sermons by Peter Masters, I don't have a church near me which I would bother entering. But I find what Peter Masters sermons stick with what the Bible says and not what I think it says. He reminds me of what I’m doing in this place, it helps me make sense of this evil world, and he knows the Bible well. He's a pastor from your part of the world, his church is the Metropolitan Tabernacle in London. That probably sounds like some kind of sell but it's not, he doesn't know I listen to him, I’m just telling you because it works for me and I would be mean of me not to tell you. I just listen to the sermons and Bible studies he has recorded on their website and it helps me. The stupid thing is I always drag my feet to do it, but once I do, I start feeling a whole lot better. So I don't know if that’s for you or not, but I thought I’d put it out there because that's what makes me want to live. It's been lovely getting to know you, it's a bonkers way to get to know someone but it's a bonkers world. I hope you start feeling better soon.

    Just watching this latest video, you do know you do so much, and i think you need lifting up a bit, i think you are an exceptional person, you try your hand at everything and do it so well, you are so hard on yourself,it’s just the way you are, not easy to change that of course,i was similar to you and learnt over the years to let some things go, otherwise you will make yourself ill, try to ignore some jobs you think you have to do, and wait till next week,they will still be there. You know somethings just don’t turn out they way we think they should,but it’s not the end of the world.i would suggest you have a little cuddle of those precious little dogs of yours and look up at the sky and see what a great place you have. My thoughts are with you and i wish you the best, pamela hall

    Sometimes, like today for instance I was very tired, I had a lot to do but I couldnt be bothered. the sun was shining so I put up my bench in the sun and at first I did some knitting and afterwards some sleeping hahaha. Tomorrow there's another day. My grandchildren will be here and then I need all my energy. So sometimes you just have to give in and sometimes you have to kick yourself under the bum and go on......... both can be selfcare........... I also had times that I went on and on even when I didn't have energy at all due to some chronical deseases. so you have an energy level of -2 and you give a 100% and you end up on an energy level of -20......... that's not selfcare........... So take care of yourself... ;-)

    I just tried making crumpets for the first time using this video from John Kirkwood and it worked. (I also printed out the recipe, since he didn't mention everything in the video. They weren't perfect, but they were golden and cooked all the way through, even though they were different thicknesses. And they were delicious!

    I bought the temperature gadget, but found it really difficult to regulate the temperature of the pan on an gas stove. I wish I still had that electric frying pan I recycled a few years back to make room in my pantry. Next time I'll try the electric griddle. I think the key is the temperature of the pan. Maybe you've aced the process by now, but just in case, I thought I'd pass this along. Good luck!

      Thank you! I can’t make normal crumpets, it’s the sourdough ones I’m trying to master (still haven’t) but I love the sound of that man’s voice so I’ll watch his video anyway!

      @@talesfromcuckooland I can see you in me. Since I had it my energy will SUDDENLY drain; just like a battery. Often it starts with my eyes needing to close. It’s VERY draining. Please take care super-woman 🌸

      Sometimes, when I feel like you describe, I pull the blankets over my head with a good book or my iPad. After a few hours, I slowly but surely feel the need to start moving again, do the same old chores with new energy and refreshed spirit🥰. Be kind to yourself, you do need a break every now and then❤
