Your tomato plants look fantastic! Here in NH, I have cucumber beetles so bad that this year I'm trying China Jade and Katrina covered up with insect netting. They both pollinate themselves. I got the seed for China Jade from Baker Creek and the seed for Katrina from Johnny's.
I have a fight with cucumber beetles ever year too. Last year was a lot worse than this year thankfully. I can finally say I was able to grow a cucumber plant. I’m watering twice a day.
Keep up the watering cucumbers and you'll harvest. Don't follow the 2" a week rule. In this heat, they will burn up. I'm a little further along, and mine are getting a gallon of water each. Every day.

The idea that pine needles and mulch will acidify soil is an old myth. Pine bark mulch is my preferred mulch for my veg/tomato garden.
