First off, I realized this video is pretty much just a love letter to mushrooms 😜 What can I say? They slap! I told you my secrets, now I want to hear yours!!! What do you swear by in the kitchen?
Almonds are one. I use them to make almond milk for my morning coffee and my cereal. Then I dry the pulp in the oven to make almond flour. I use the almond flour to make vegan parmesan cheese. Life is good!
Found your channel a few days ago! Theres been a voice in my head for months telling me to go plant based and vegan. Watching your vids has showed me that i can easily do it. I come from the restaurant industry and ive been cooking with meat my whole life but i get lost mentally when i eat it.. Thanks for the inspiration im definitely going to be documenting my journey!

YEs!!!! Mushrooms are so underrated! Whenever people say they don't like them it's mostly because they haven't had them cooked right. So many good tips in here! Another fantastic video
Mushrooms have SO many more uses than just whole or sliced. I adore mushrooms in every form, whether whole, sliced, minced, and/or cooked, but a lot of people forget that if they are DRIED it makes them a seasoning. Which can be as crucial as salt and pepper depending on the recipe. Ground dried mushroom powder is absolutely indispensable in my pantry.
My daughter doesn't like mushrooms either - so I put them in the food processor to give them a ground like texture. I use this for tacos, chili, etc. and she eats it without fuss 🤗.
I too am a lover of all things mushrooms, king oyster, Portobello, hen of the woods, lobster mushrooms. I made your taco lentils and black bean salsa from your better than chipotle video and my family loves it. I went vegan by watching a lot of your videos. Thank you with love from my family to yours💖
I just received my Sweet potato Soul recipe book. This book is unbelievable it is truly good for the soul. I am not vegan but I want to eat healthy and feel good. Please buy this book I am sure it will change our life. I plan to start with small changes the sky is the limit. Thank you so much.
Wow you are a very inspirational cook. I am hooked. Was vegetarian for 17 years and have been a successful forager ramps, hen and chicken of woods and some others. You have inspired me to up my game. I cook basic but it’s time to be inspired. Thank you
I just made a mushroom dish using most of the ingredients from your Good Luck Black-eyed Peas recipe and oh my goodness! It was fabulous! Thanks for helping me love mushrooms.
Omg thank you for making this video because this is where I get stuck is with flavor. I’m a savory type of girl so this was very helpful and I love mushrooms so the explanation of the difference was also helpful
I just came across your channel today, Nice video! Thanks for sharing. If you can make an entire video on mushrooms please do! I'm a big fan of mushrooms and would love to cook more with them.
My best trick is contrasting sour flavors with fat. Usually avocado or a nut butter. Fermenting also ties as my biggest trick. It takes a few special lids and not much salt to make extremely exotic flavors that just keep going. Also, ferments are acidic. Can't forget microgreens either.
Omg! You just saved my life with this collard green tip. I’m not vegan or vegetarian but I do like to still eat call greens even when I don’t have Bacon on hand. And I’ve tried to use veggie stock and other vegetables to give it a flavoring but it is never quite the same. I’m going to try this!
Clear, best explanation yet for adding flavors: great! I follow recipes that are complicated but this is so easy to understand and also to use for multiple recipes! I imagine once you get the science down for flavor, it easy to buy products, I’m home free! Thank you!
What a lovely, informed, bright spirit you are! I'm making your red beans and rice Feb 16 and you'll get all the credit. So happy to find your channel!
I just recently went vegan and am learning to make plant-based “meat”. I’m using mushrooms, and I’ve got wheat gluten down fairly well. I got a can of jackfruit to give that a whirl. I wish more people would open vegan restaurants. Outside of big cities, I have to just cook for myself. Thank you for your videos.
Thanks!! This was so helpful. I don’t if I will ever go vegan, but I do want to eat more vegan meals. I would love to watch on whole video about how to use mushrooms!
love love love mushrooms. It wasn't until I got to Asia that I was able to explore the full spectrum of mushrooms. There are also needle mushrooms that are great in soup
I'm like the opposite of your daughter; when I was little, my parents tell me I used to rip open packages of mushrooms at the grocery store and eat them raw right there in the store! 🙈
Smoked salt and smoked peppercorns also do a fantastic job at bringing a "meat" flavor like bacon. We use it at home on weekends when making breakfast. 👌
You are so beautiful 🥰 thank you for sharing your secrets with us! I had to re-learn everything I knew about cooking when I turned vegan and now I’m always trying to get better 👩🍳
Just found your channel and I already love you, and your approach to vegan cooking, not to mention you’re absolutely gorgeous. Thanks so much. I rely heavily on mushrooms but I haven’t ever tried many of the ones you identify. I agree with another commenter that you should do a video focusing on mushrooms. Thanks again from your new subscriber!
My husband and I have recently gone vegan, and have been loving the creativity that comes with the new lifestyle. I’ve been hesitating making greens because I was worried the missing meat flavor, would be an injustice. I plan to apply your easy suggestions.😊👍
My Polish Grandfather used to go foraging for mushrooms, and knew which ones were safe to eat. I hate that his knowledge was lost to the hands of time. I eat mushrooms almost daily, and noticed they’re almost impossible to burn. They just get crispier, and their flavors bloom more, but they never seem to overcook. Lovely video!
Be careful foraging for wild mushrooms. About a month ago two people died and many people were sickened when a sushi restaurant in Bozeman, Montana served wild mushrooms in sushi rolls to customers. My husband had a good friend who died after consuming wild mushrooms he foraged; He had been foraging wild mushrooms for many years. I had a mushroom guide book and it showed pictures of a deadly poisonous mushroom called a Death Cap mushroom that is easily misidentified with another safe type of mushroom.
in Greece, they would always squeeze lemonjuice over every meal, and i loved it. Being trad british raised, i eat parsley with everything - this, too, works!
Thank you for your tips. I love watching you cook. I got your cookbook awhile back and have enjoyed adding a southern twist to my vegan cooking. Your cornbread recipe in your book is my go to cornbread recipe!
Wonderful video...LOVE MUSHROOMS...Alton Brown did a segment on washing mushrooms...soaking in water...then weighing them...PROVING that they do NOT SOAK UP WATER WHEN WASHED.
I need you and Rainbow Plant Life to do a video together...Okur! I’ve been following both of you and love the different styles. I’m trying to get back to a more whole grains diet...and bring my family along. This is my summer experiment.
Recently tried ACV in my vegan cornbread. They came out perfect! I don't like mushrooms; however, I will have to try them this year. Your video was very informative.
Greetings I hope that you are well Wow I never thought.🤩🤩 I'd discover this wonderful recipe anywhere on the map!!!!😃😃 I could never figure out how I could be creative with collard greens!!!! Gotcha!!💛 Be well 💛 Thank you
I've never tried soy sauce on collard greens. I will have to try it. I normally make mines with shitaki mushrooms or portobello mushrooms and bell peppers. Then I season it with garlic powder, onion power, salt and smoked paprika. I feel like replacing the salt with soy sauce will make it even more flavorful. I can't wait to try it.
I have been using Citrus Herb spice! It is the best, a taste of Thanksgiving all the time. I add it to pasta dishes, veggie burgers. A new blend from Thrive Market!!!
Thank you for this!!!! I was literally researching mushroom types and how to cook them. I don’t like white mushrooms, but I think I’d like other types. I just didn’t know where to start. This was very helpful, but PLEASE DO A VIDEO DEDICATED TO MUSHROOMS!!!! 🙏🏾🙏🏾🙏🏾😁
I am so glad someone is finally talking about the mushroom I have always felt and used it in place of meat for so many different things but when I was first learning 5 years ago it was rarely used and no one talked about it luckily I always liked mushrooms so I used them anyway they have such great flavor and also are great with added flavors as well
I love your tips, especially the mushroom recipes and suggestions. We’re so happy that you’re back to making your lively videos for delicious vegan meals.
tabitha brown introduced me to nori furikake and also vegan fish sauce for seafood flavor! i can eat the nori furikake by itself😅 i’m gonna give these recommendations a try, thank you!!😍
Thank you for explaining how to properly cook the mushrooms!!! Whenever I cook portobellos, they always come out so watery and almost slimy after sautéing in olive oil and I never knew how to do it right! I've been craving fried oyster mushrooms, these all look divine 😍😋🍄
Great suggestions 🙂. I’ve been vegan for awhile but don’t really know how to cook for certain flavors and have no one to ask; so this is a big help. I also love mushrooms & am excited to try your ideas. I’ve only seen Portabellas and button mushrooms in my stores though. Thank you sweetie 💜🌸
I hit subscribe when you started showing the mushrooms. Trying to shift my diet, and discovered that I could use mushrooms as a delicious substitute for meat or eggs! I love foraging them as well.
Just starting to transition to vegan and this is so helpful! Could you do a video specifically on the different types of misos (and which ones are good for what kinds of dishes)?
This is exactly what I've been looking for...the "HOW"...how to create certain flavors. Please do more videos like this one. For example, how to make leafy greens like kale etc taste less bitter, especially If your not a fan of the "earthy" flavor.
Thanks for the tips I usually put liquid smoke in my greens and Beefless broth cubes and it be 🔥🔥🔥 along with onions red pepper garlic got to have GARLIC
I totally felt you when you said "the umami factor isn't optimized" - you're speaking my love language, Jenné!
Your channel is the bomb! I love your recipes and your videos!
Glad we’re on the same page 😆
LOL! I thought the same thing! I love all my fellow cooking nerds on youtube

Haha!!! Someone literally just said the same thing about something my daughter was wearing the other day 😂
So cute--can you share the brand?
First off, I realized this video is pretty much just a love letter to mushrooms 😜 What can I say? They slap!
I told you my secrets, now I want to hear yours!!! What do you swear by in the kitchen?
I sprinkle Oreos on everything I eat. Seriously though, handmade Arepas or tostones are my go to. 😋
For smokiness I use a product called ‘liquid smoke’ it’s an amazing flavour enhancer for anything that would use ham like pea soup, baked beans etc :)
For Mexican cooking, I love using salsa de chile de árbol con aceite
Almonds are one. I use them to make almond milk for my morning coffee and my cereal. Then I dry the pulp in the oven to make almond flour. I use the almond flour to make vegan parmesan cheese. Life is good!
@@theippster8891 liquid smoke is a pantry must!
The miso in hummus is a stroke of genius!
Even though I’ve been vegan for a few years, I’m always learning new things! 🙌🏽

Glad you learned something new :)
