Given the video title -- and the time it takes to make Vietnamese coffee using a phin -- I would think any café would prefer making large quantities using a 1 liter or 1.5 liter Vietnamese coffee pot. I went to a café serving large quantities and that's what they used. Have you tried 'Cà phê vợt' in your travels?

I haven't tried it myself yet (waiting for my phin 😊), but I have seen that you're supposed to do it a bit coarser than an espresso. Not quite drip coffee course, and not espresso fine. You'll know based on how fast it drips out. I think it's a 5? minute brew time that you should aim for (after the first drip)
