For example, for the main body, would I do a paragraph of how Sheila is at the beginning of the play, then a second paragraph of how she is at the end of the play? Or would I focus on beginning and end in each paragraph, highlighting a different /way/ she has changed in each one? Also, how many paragraphs would you say are required in a good literature essay? thanks!
Great question and I am making a video on this very topic to be released very soon. You do have the right idea though: compare and contrast the extent to which Sheila has changed as a character throughout the play, plus a thematic link by examining why Priestley has her change too. I wouldn't say there is a magic paragraph number. It is about seeing a full argument through to its completion. With the above structure on Sheila, you're looking at a brief introduction, a paragraph on her at the start, one on her in the middle as we see her beginning to change and one on her towards the end as she has really changed, followed by a brief conclusion. So five paragraphs total, with the three in the middle being so large they could probably actually be a couple of paragraphs each.

Yes. The themes and characters in AIC are inextricably linked. If you can write an essay on Sheila, you can also write an essay on gender. If you can write one on Mr B, you can write one on class and power. Once you have Sheila and Mr B, you can also cover the younger versus older generation. Next, add the Inspector to the mix. Once you can write an essay on him, you can write one on socialism and class. Once you have the Inspector and Mr B, you can do socialism versus capitalism. IMHO, if someone is trying to get by on the absolute core of AIC, they'll have Sheila, Mr B and the Inspector sorted (this is assuming your exam board gives you a choice of two questions and they follow the 'one on character, one on theme' pattern; if your exam board only give you one question, this is too narrow a focus to risk). In an ideal world you would also have a few key quotes in mind for Eva and Mrs B. Eric and Gerald can go whistle.
