Sugar in salty things brings out the salty flavour of the dish you're preparing, but without it being too salty (I phrased this quite confusingly, but I hope you get what I mean), meanwhile putting salt in desserts, kills the (at times) sickening sweetness of the dessert you are making, and makes it WAY better
I worked at a McD’s in college, but those McGriddle “buns” always came to the store pre-made (I think frozen, but it’s been over 15 years, so I could be mistaken). But they always looked like they were “injected” with syrup into the pancake, after the pancake was cooked. I couldn’t tell you for certain, though. Side note: after working at McD’s and after all these years, I still have never had a McGriddle! LOL! I truly don’t know why I haven’t tried it, but I had this realization I hadn’t after seeing this vid.

I can’t find anything online right now… but years ago I saw a behind the scenes look at how they make McGriddle buns and they use essentially maple syrup “chips” which are mixed into the batter and when the buns are cooked they melt into little pockets of liquid maple syrup!
I really wish Alvin and Josh (Mythical Kitchen) had a collab. One intentionally makes bigger versions of things and the other unintentionally makes them bigger versions while trying to make them expensive as hell.
Weird allergies means virtually ALL fast food is off limits (or else EpiPen), so I am definitely going to need to figure out how to downsize Alvin's recipe! I may actually be able to have a McGriddle (minus the cheese, because......*sigh* allergies) and properly enjoy it without an EpiPen or migraine meds involved.

I have an interesting story with the immersion blender. Once in food tech or food study, we were cooking pumpkin soup and everything was going perfectly until when we had to use the immersion blender to combine all of our ingredients and actually make the soup. My friend had never used on so I let him use the blender and from no fault of our own the part that houses the blade just fell off releasing a bunch of black goop and material into the soup. Obviously we couldn’t eat it because of health reasons and we never got to try our soup but at least we got some laughs out of it
The Mcgriddle doesn't have syrup poured in the batter. They use maple syrup crystals that are baked into the pancake. That way you have small pockets of actual syrup in the bun.

For the batter portion of the recipe, try making crystallized maple syrup and crumble it up and add it to the bottom and top of the "pancake"
