- Resepi pizza Turki dengan olahan rasa local menggunakan sardin dan kentang sebagai bahan utama untuk inti. Kerak pizza ini menggunakan telur dan diglis dengan kuning telur, berbeza dengan kerak pizza biasa. Teksturnya lembut dan sedikit kenyal. Sedap dimakan ketika panas.

Jumlah Hidangan : 4 keping pizza
❤️INTI :
350 gram kentang (potong kecil & rebus) | dalam 4 biji saiz sederhana
85 gram sardin (hancurkan)
1/2 biji bawang bwsar (hiris nipis)
1 sudu besar minyak zaitun/ minyak masak untuk menggoreng bawang
1 tangkai lada merah
3 tangkai daun bawang
Garam secukupnya
Serbuk lada hitam kasar secukupnya
Keju Mozzarella parut secukupnya
❤️DOH KERAK:
140 ml air suam kuku | 1/2 cawan & 1 sudu besar
1 putih telur gred A
7 gram gula halus | 1/2 sudu besar
4 gram yis kering segera | 1 & 1/4 sudu teh
45 ml minyak zaitun / minyak masak | 3 sudu besar
250 gram tepung roti | 2 cawan
65 gram tepung gandum | 1/2 cawan
4 gram garam | 1 sudu teh
❤️HIASAN :
Glis : 1 kuning telur + 1 sudu besar susu (optional)
Bijan putih secukupnya
SUHU MEMBAKAR : 200℃ | 390℉ selama 15 minit pada rak kedua bawah, api atas bawah.
Kemudian, bakar pada rak tengah selama 7 minit. Ketuhar dipanaskan selama 15 minit.

[ENGLISH]
This version of Turkish pide is deliciously flavored with local ingredients such as potato and sardine. The crust is soft and slightly chewy and it contains egg white, unlike the regular pizza crust. The edges are brushed with egg yolk and sprinkled with white sesames. It is best served hot, but still good warm or at room temperature.

Yield : 4 pieces
❤️FILLING:
350 grams potatoes (cut into pieces & boiled) | about 4 medium size potatoes
85 grams sardines (coarsely mashed)
1/2 onion (thinly sliced)
1 tbsp olive / cooking oil for frying onion
1 red chili
3 stalks green onion
Salt to taste
Coarse black pepper powder to taste
Shredded Mozzarella as required
❤️CRUST DOUGH:
140 ml lukewarm water | 1/2 cup & 1 tbsp
1 large egg white
4 grams instant dry yeast | 1 & 1/4 tsp
7 grams fine sugar | 1/2 tbsp
45 ml olive/ cooking oil | 3 tbsp
250 grams bread flour | 2 cups
65 grams all purpose flour | 1/2 cup
4 grams salt | 1 tsp
❤️Decoration:
Egg wash | 1 yolk + 1 tbsp milk (optional)
White sesames
BAKING TEMPERATURE : 200℃ | 390℉ for 15 minutes at second bottom rack, top & bottom heat mode. Then, bake at middle rack for 7 minutes. Oven is preheated for 15 minutes
