I made this once and didn't have cocoa powder. I put cocoa nibs in a coffee grinder and used that. While the texture was a little grainy, it was DELICIOUS! I'm making again today for my Grandmother's 94th Birthday Party!!!! Can't wait

i have made this cake so many times. It's my all time favorite. Have you ever tried making this without the cocoa powder? I want to make a vanilla cake and wondered if just leaving out the cocoa powder would work or if i would need to add 3/4 Cup of some type of dry ingredient.
I honestly love chocolate cake so much I've never tried a vanilla version! That makes me wonder... I honestly don't know, I'd have to do some experimenting. If you end up trying to make a vanilla cake, you have to let me know what you do!

I do this recipe with a discard and it was delicious! Actually your discard gets fed when you add the flour to it. And 1) I do not let sit over night; I bake it as soon as I am done mixing; 2) I reduced the sugar to one cup. The result is very nice, moist and spongy.

I just made this cake (haven’t tasted it yet) and it’s only about an inch high. Can’t figure out why it’s not as high as yours. I didn’t have a hand mixer so I used my KitchenAid with the whisk on it.

Wow thank you for sharing!! That is so wonderful to hear:) I haven't made a video on increasing your starter, but that is a great idea! To increase the starter, feed your start 1c flour and 1/2c water every day without discarding until you have the desired amount.

I'm making this tonight. Hoping my husband likes it. He absolutely does not like the sour in sourdough. I made cinnamon rolls (not your recipe-yet) :) and I did not think they had a strong sour flavor at all but he took one bite and that was it. He could not eat it. I did make a sweet stiff starter so hoping that helps and I'm not going to ferment it as long. Longer fermentation makes the more sour taste doesn't it? Chocolate cake is his favorite dessert and I'm hoping this one will be a hit.

Hello buddy I've been baking sourdough for just a few months but I have not yet baked a perfectly risen loaf, worst lately my sourdough bread looks like pancake, very tough and and barely rising, I dont know what's wrong. I observed after I transfer the loaf from the banneton it just sagged on, the more it goes after I scored it, seems like the dough has not enough strenght to bulk or hold to it's form. I need you expert advise. Appreciate it much.

It will change the texture of the cake and make it more dense. If you want to skip the soda, make sure the starter is really active to give your cake the best chance to puff up. You could try substituting the oil for nut butter, it would likely just make the cake more dense again. I love coconut, avocado and olive oils personally. Give it a try and let me know how it turns out!

Can soda be skipped? Can we substitute oil for nut butter?
It will change the texture of the cake and make it more dense. If you want to skip the soda, make sure the starter is really active to give your cake the best chance to puff up. You could try substituting the oil for nut butter, it would likely just make the cake more dense again. I love coconut, avocado and olive oils personally. Give it a try and let me know how it turns out!
