I'm 29. I didn't see Zootopia in theaters; I saw it on Blu-ray. I recognized the godfather reference after I thought about it a little bit. And now that I look back on it I recognized the Jurassic Park reference in Toy Story 2 almost immediately.
Duke Weaselton from Zootopia is also a play on words with the Duke of Weselton from Frozen. Both are voiced by the same guy. And the running gag in Frozen about everyone mistaking his name with “Weaseltown” just makes it even better.
It gets even better when you watch the not-so-great Disney movie, “Home on the Range”. It makes me want to know how long have Disney been putting a Weasley/Wesley joke in various movies?

Top 3 (In my opinion): 1. Here's Brucy from Finding Nemo 2. Rex finds a way from Toy Story 2 3. Mr Big from The Godfather This was really tough because a lot of them I did not know the references or recreations and it was even tougher for Top 3, I just couldn't decide. I wished the scene in Toy Story 2 with Emperor Zurg being the father of Buzz Lightyear, which is a reference to Star Wars, was in the Top 10 because it is one of the best callbacks or references in movie history. It is so iconic that I would put it at number 1. Also is there a possible connection with the Godfather and Zootopia with that scene of Mr Big? There's a possible theory that Zootopia is an alternate version of the Godfather, something like that! That would be interesting!
My favorite is from Coco where Miguel imitates the Andy DuFresne reaching up to the sky in the rain pose when the roar of the alebrije brings water raining down on Miguel and Hector. Nice shout out to The Shawshank Redemption.
They reference that one by Angelica actually catching a glimpse of that scene in the movie. My favorite scene is Coco yelling to take a picture after her underwear gets exposed, which several tourists promptly start doing.

I searched for The Swan Princess reference in The Princess and the Frog, and it’s hard to find. the reason is Naveen (in frog form) looks resembles and behaves similarly to Jean-Bob, Odette’s French frog friend, and the sphere of water when Facilier's spell is broken looks just like Odette’s transformation.
