Yo, Italian tip here. Always blend the tomatoes before you cook it. The reason it looks like vodka sauce is due to all of the air in it. The cooking removes the air bringing it back to that sexy red.

Yeah 500° C is hard to reach even if the oven is already burning. Kelvin would make sense here (500 K ~ 226 °C) but he said '500 degrees' and Kelvin is not a degree scale. Also there is no need to preheat an hour to just get 226 °C. I Guess he uses Fahrenheit.

If you don't have a scale, here are the cups and standard measurements
Pizza Dough:
3 Cups Bread flour
4 Teaspoons kosher salt
1 Teaspoon active dry yeast
1 1/2 Cups water
But he says "1 gram or a quarter tsp dry yeast". May as well try your measurements tho cuz my dough was soupy n gross

Few other tips, from working in a pizza kitchen:
1: tuck and fold the dough into into itself as the dough becomes a ball when the dough is initially ready to be worked with. put into the fridge 20 min and you'll find its a lot easier to work with and requires less flour
2. pat the ball with all five fingertips gently to pop the air out and increase the surface area slightly. you're looking for a uniform thickness here
3. using your thumb and other hand, push the edge of your dough with your thumb into your hand. the idea is to create a nice, even, tight, round outer edge for a crust thats not too thick
4. to stretch it out uniformly (before to knuckle over knuckle trick), place one hand firmly (but not too hard so it doesn't rip the dough) on the dough, and with your other hand, drag the dough in an arc motion and gradually stretch it out. floured surface is a must here. keep doing this all around the pizza and it will stretch out evenly.
5. before sliding in the oven, lift the dough up and blow a tiny bit of air in it. makes sliding it on the stone so much easier.
Nathan Wilson being someone who worked with pizza, I have a question. I’ve got the dough sitting now, but I should know this.
Do I need a pizza stone or pizza peel? I have neither or any money to buy one. What should I do?
pizza peel isn't a must but i've never tried making pizza without a stone. when adding all the toppings just make sure whatever your work surface is you can pick it up (which is the point of the peel, but a large cutting board will do) and slide it into the oven. you'll probably be okay with a cooking or normal baking sheet, maybe just make sure you have a little extra flour on the bottom of your pizza. some baking parchment paper on the baking tray might work well too since the pizza won't stick to it, but you'll want your surface to have heated in the oven already so i might avoid it (maybe test with a mini pizza?)
the trick to sliding it onto the stone/baking sheet is to tilt it at like a 15-20 degree angle and gently shake it off the peel/work surface. that little lift and blow method makes this a lot easier.
another tip: use a little less sauce and cheese than you might think, otherwise you'll get a greasy pizza.
it took me a while to get this all down so don't worry if it doesn't come out perfect! I started working with smaller pizzas maybe 8 inch in diameter to test how they work

When you blend tomatoes, you incorporate too much air into them, that's why the sauce turns out that weird orange or pink color. You're supposed to use either an immersion blender or a food processor... or just crush them by hand.
I mean he also didn't use basil in the sauce itself, so I had just expected this to sort of be his own take on a standard tomato sauce.
Also, who cares about the sauce color, as long as he uses the sauce right away, there won't be much difference in taste.
Yeah, I actually didn’t care for the colour of that sauce. I usually just crush the tomatoes by hand. But, whatever works. I’m sure the sauce tasted great. Just not that visually appealing.
Actually the orange color it's because the tomatoes emulsionate with the olive oil. If you blend the tomatoes, garlic and onion and then put it in the pan, the sauce will be bright red.
I recommend crushing by hand for tasty little tomato chunks which almost act as extra toppings
Or if you're like me, you dump a bunch of vodka into the sauce, and that's why the sauce is orange.

Pizza making is sort of a hobby of mine. I recommend a pizza steel for the best crust! Pizza stones work well too, but not as well in a conventional oven. Also for better flavor I recommend using 00 Pizza flour and doing whats called a cold ferment with the dough. You can find recipes online.
I usually buy the dough because I'm lazy and use mozzarella that I cut up. It's amazing how much better it is, even using store bought dough. I also use a cast iron pan, I don't have a pizza stone.
Aeis I personally use cast iron but I cook it a weird way because my oven doesn't get hot enough. I start it on the stove and finish it under the broiler
Coffee is a drug like marijuana I've made my own dough before and agree it is way better, but I usually just make pizza on the fly and don't have the time to make dough. Have never tried to make the cheese though.

I've made the dough going to experiment tomorrow about how to get it into the oven and find an alternative to a pizza stone. Some alternatives in the video would've been nice considering this is in the 'basics' series.
Joshua Roberts use a sheet pan as your peel and a cast iron pan as your pizza stone.
ZonalJump I ended up using a wooden chopping board dusted with flour as the peel and an upturned baking tray for the pizza stone.
It worked pretty well, the pizza was tasty anyway.

I followed this recipe and the dough came out really wet. After a struggle I managed to add more flour to stiffen it up but that completely ruined the overnight proving process. Add less water if you want to do the overnight thing! Otherwise I would just stick with traditional proving methods if you're new to making pizza!
It's supposed to be pretty moist and sticky when you do it. The consistency is altered later when you roll it in a layer of fresh flour.

Hey! I made my first pizza shortly before watching this video and yeah, I really should have watched this first. I'm ready to try again.
I had the foresight to buy a pizza stone, and even to dust with cornmeal, and preheat in the oven for a while, but not the foresight to buy a peel. Completely destroyed my pizza trying to transfer to the oven by hand. I also added an entire jar of prebought sauce and when slicing the pizza, runny sauce would spill everywhere. The store bought cheese didn't melt. I shaped the crust weirdly and the outer crust was way too big while the inner crust was thin af. I also used instant pizza yeast instead of fermenting overnight with active dry, i'm gonna try that next. I also used a rolling pin and totally crushed all the air pockets, making for a very caked together white-breadroll consistency in the crust that was too chewy. My peel is arriving at the end of this week (why could I only find decent ones at commercial suppliers with high residential shipping, it's BS) and I can hardly wait.

This is the first ever babish video that I tried in real life, and holy cow it was amazing !!! I'm a student so I had to get the dough to prove in my room (it did make my room smell like fresh bread which was amazing) and then I invited friends over and made a whole evening out of making our own pizza/garlic pizza bread, and hot DAMN
this is SUCH a good dough recipe, so easy and tasty, so rare that the actual dough tastes good too, the sauce was wild (I added a little bit of sugar as it was quite acidic, and tasted Amazing) and then went ham on the toppings (haha) and man, it was just amazing, thank you for this video !!

Making this right now!
I halved the recipe so its (250g flour, 8g salt, 0.5g yeast and 175ml water). Upon combining it turned REALLY WET and STICKY. I measured everything correctly so I'm not sure if its how it's supposed to be. So I decided to add a lil sprinkle of flour (maybe additional 4-5g) just so it had somewhat of a dough consistency instead of soup. I covered the bowl and put it in the microwave (its a warmer environment compared to my kitchen which is relatively cold).
Update: 18hrs later. The dough has risen and is puffy. I decided to put mine on a sheet pan with olive oil instead of using a stone or peel because I don't have those. The dough is quite difficult to handle. It's still very sticky and difficult to spread out. I managed to spread it out by dusting some flour on top of it but I think I may have deflated some of the air in it. I'm afraid it isn't going to rise :/. My oven is preheated for 20 mins in the highest temperature and I'm waiting for a second rise of the dough in the pan for 10 mins before I started dressing it up. (I'm using mushrooms and onions)
Last update : the pizza turned out fluffy but soft. I couldn't get the bottom to crisp up without burning everything else.
It's a lot of trial and error. Maybe it's the flour because I used AP and it could be that it doesn't really brown.
Any tips appreciated on how to brown the bottom and the outer rim :)
I watched this 5 mins ago and my dough is already made and in the fridge. :D Hopefully my preschool kids have fun stretching the dough and putting toppings on their pizzas.
Why the fridge?? he said the dough needs to be in room temperature for 18-24 hours is the dough going to go bad in room temperature?
It was kind of too hot for room temperature and I didn't want the dough to have a sour taste like sour dough. I ended up just putting in the fridge over night and let it sit back in room temperature for 2-3 hrs. It was so soft and springy! The dough turned out great and the kids had loads of fun putting their own toppings. I can say that this was a big hit. :D Thanks!

Hi Danny, I did exactly 1 gram of yeast and it worked out fine. I was concerned too because typically I would use more than this when I am making bread. However, it turned out fine. :) Good luck!

New to this channel and I love it. Tried this recipe and it was amazing. I need a little work on my dough handling skills though. The first one I made too thick and the other ones were too thin so the cheese and toppings would fall off unless they were cooled enough. I need to find a good in between, I also need to give the pizza more "backbone" in the sense so each slice doesn't bend when picked up.

A Stromboli is more traditionally rolled like a jelly-roll instead of a simple folded-over turnover as done for a calzone. I've never had a calzone covered in sauce, though sometimes there is a dipping sauce.

That happens when you emulsify the oil with the sauce, to prevent this you can blend the tomatoes before throwing them into the pan
You don't need to cook the sauce, it gets cooked in the oven. I prefer to drizzle olive oil on top of cheese versus adding to tomatoes

Just made the pizza myself, it was absolutely delicious. the sauce and the dough turned out great and really wasnt too difficult. I did what another comment said about blending the tomatoes first and it worked. I was worried about the dough tossing part but I made 3 pizzas for my family and none of them tore or anything so i think i did it pretty well just from watching the video. Overall great recipe and I would highly recommend
hey. when making dough did you pour 350ml of water at once or you were doing it few times and checking the dough? didn't understand this from the film.

It's because that is natural color of tomatoes when puréed. The sauce you see in cans has red dye in it to make it more appealing
