- It is the perfect time for mango kuchela as mangoes are in season. Kuchela is a spicy condiment prepared in a similar fashion as amchar and it contains lots of garlic, pepper, mustard oil, shadow beni and amchar masala. Kuchela has Indian roots and though the original recipes would have been brought by the indentured immigrants, much of what we know about Kuchela today would be adaptations of the original composition. Extremely delicious nevertheless and is considered a must have for several occasions. Kuchela makes every meal more palatable and over the years I have learnt, in pleasantly and surprisingly creative ways, that it blends well with different flavour profiles and cuisines.

The difference in the Mustard Oil was one said - Pure Mustard Oil - and the one you chose is Regular Mustard Oil.

Melissa I South Africa we also call grated pickled mango kuchela and we preserve or pickle it much the same way except the masala we use is called achar masala or pickle masala. It's a lot of work in making any kind of pickle but you are such a foodie hence you are so passionate in making the Kuchela. You make such simple vegetarian dishes look so tantalizing and delicious. Love to you and your darlings... They love you so much and they appreciate all mamma does for them... I see their gratitude.... Melissa you are such a knowleagible young lady but an old soul too as you do things like my mum used to.

Great video. I suggest using parchment paper to cover the pan instead of foil. The acidity of the mango will also corrode the aluminium foil.

Lasana and his family are self destructing, I have pleaded with all of them to please maintain the peace for the sake of all children involved that are affected by the adults bickering against Melissa. The drama gives him the views and this is what he likes. Lizzie let’s not give them attention. They’re all spiraling downhill very rapidly and it’s sad but hilarious to watch 🍿 Lasana made the greatest mistake in sending a threat to me in a video last year. I reached out to Melissa to offer whatever support I can for the sake of the children. The Baptiste are just annoying little🪳flies on the wall that could be swat easily. I have advised Melissa to ignore and remain silent and let them dig their own hole much deeper. 🤣 Note I refer to their names as I would love to challenge them in court but they’re simply cowards and can’t face me. I see the trap they’re setting for me is backfiring on them without me even lifting a finger. 🤣

There is different light colour one is pure muster oil which is better and the darker colour one is a flavour one
