  • Grated carrot salad is a classic French side dish that is popular in Argentine cuisine. Although a shredded carrot salad with no lettuce may sound odd to people in the United States, it is actually very easy, delicious, and healthy. Although a lemon vinagrette is the most traditional dressing for grated carrot salad, vinegar is good as well.     I love carrot salad, we make it using a dressing made with vinegar, sugar and raisins. It's good to take on picnics as you don't have to worry about spoilage or mayonnaise.

      I am sure that vinegar, sugar, and raisins would be good. The sweet and tart would be a good combination. You are definitely right about not worrying about spoilage: with no mayo, this salad is very transportable!

      @@ParnellTheChef my grandmother would make this, and would add raisins, or do carrot and apple salad, and maybe sometimes add raisins or walnuts. As you surmise it works with raisins.

    I couldn't agree more with you that simple is often the best. I love using lemon on many vegetables so I'm not surprised that it works well with the carrots! What a nice unique compliment to round out a meal!

    a Vibe on the Wind, last night I ended up making grated carrot salad, it started out as cole slaw, but the processor blade turned the cabbage to powder and the carrots a perfect shred. I used my usual cole slaw dressing recipe (which is good on shredded lettuce) with no problem. and here you are shredding carrots too !

      Even if you don't like carrots, you would probably still love this grated carrot salad since it is more about the combination of flavors. However, if you just really do not like carrots, you could try the shredded beet version👍

    I had wondered why I didn't see any raisins in the Carrot Salad. Cos I grew up eating it like that lol. I learned from you Parnell the Chef that in Morocco they add raisins. I didn't catch it but we never eaten Carrot Salad with Mayonnaise or Olive oil it was actually with Whipped Cream. Anyway I am going to try your version cos it really looks just as Yummy and Delicious as to the way me and all of my huge Family has eaten it. Thnx Again for the Inspiration! I like the Chef's Hat.       Yes, my understanding is that adding raisins to shredded carrot salad is Moroccan. There are a ton of versions of this salad, though. It is very versatile.

    I absolutely love carrot salad. I use my box grater several times a week. I add grated carrots to my tuna salad as well. Oh and love the idea using the beets

      Shredded carrots in tuna salad sounds good!

    Parnell what a delicious shredded salad recipe. I love simple and easy it’s all about the fresh produce I agree sometimes a box grater is just as fast because of the cleanup is so much faster. Great tips on just lightly dressing the carrot salad with the lemon juice and olive oil this is something I would definitely love to try

      This grated carrot salad is definitely all about the fresh produce.
      Sometimes trying to save time--or money--just makes life more difficult, as in the case of a food processor, lol.
      This salad is all about the balance between sweet and tart, so once you find the right amount of lemon juice, this is truly a delicious side dish. Let me know if you try the recipe!👌👍🇦🇷🇺🇾🇫🇷

    Hey Parnell. Finally had a chance to catch up with your recipes. This salad sounds very good. I'm not a huge fan of carrot, but I can eat them raw like this. Lemon juice and oil is usually how I like to eat my salads. We had a similar shredded beet salad at a Polish restaurant in the suburbs.

Like I said in the video, using shredded beats is an option, too: it needs a bit more lemon juice, but it is very nice!

    I make a carrot which is delicious. Carrots grated ,Pineapple grated and some cubed and Oranges sqweezed. Mix together and serve on cabbage leaves it needs no other embellishment. Margretha South Africa

      Hi, Katie!
      I would not freeze this. When fruits and vegetables are frozen, something happens to the cell walls (I don't have time to look up the science behind this right now), but basically, they lose water once thawed again. Ever notice how runny frozen berries are? If you freeze this, it will be very watery and soft when thawed unfortunately.
      My best recommendation would be to grate the carrots, wrap them in plastic, then keep them in the refrigerator for a few days at most.

      Yes, another version has raisins. I would like to try it with golden raisins, perhaps. I love those! I bought them for the first time when I made my "Japanese Fruit Pie," and now I love them!

    oh , my mom made a mix of grated carrots & raisins & chopped up apples i wonder if the dressing here would work with that? (im thinking of making it & adding dates to see if that works as well) don't know what dressing she used but man it was good,also have you heard of carrot "penny salad"? its a kinda of lightly pickled salad & the sauce it makes is wonderful added to other salads

      You're mom's carrot salad sounds good! Honestly, I think that the lemon dressing would work. I make a colelsaw with apples and coleslaw, and I add lemon juice and mayo, and it is fantastic.
      I think that dates would be good as well--extra sweetness.
      No, I have not heard of penny salad. I googled it, and it sounds like vegetables in a tomato soup, sugar, and vinegar mixture? Very interesting.

    This is how I make coleslaw at home, just add green and red cabbage..I hate the traditional coleslaw dressing, this dressing of olive oil and lemon juice is perfect:)

      Thank you for your feedback. However, since I had to decide how much dressing to add instead of just going by taste, that took a bit of time. I wanted to show that process for beginner cooks: having a recipe is good, but for things like this, sometimes you just have to taste it as you go. I also needed time to discuss the French influence in Argentina.
