Was in Vancouver during last year's Christmas and saw about half of your list in around 3 days (so, often fleetingly while walking from a-b). I would not recommend Grouse Mountain unless you have kids. Van Dusen is definitely worth the $. And I have no regrets about Capilano Suspension Bridge Park but I would suggest go early on a week day (I arrived around 2:30pm) and stay until it starts getting crowded around 7pm (that still gives you around 3h to enjoy the lights once it's dark and the lights are on during the day too; and bcos much of it is dimmed by large overhead trees the lights still contrast more than you'd expect)
