Cream Cheese is found in the refrigerator section of your grocery store usually in between actual cheese and yoghourt. If you still can not find it, you might try yogurt but again it will yield a different result. Good luck.

just made this, really nice. reduced 5 packs of cheese to 3 and this went out perfectly without the "cracks". my first ever ny style blueberry cheesecake.
Thanks for sharing this recipe, it was a hit on a family mother's day party today everyone loved it. The top had several cracks maybe because the ingredients were cold, I was in a hurry but it was delicious, not too sweet just perfect and i covered cracks with some french vanilla whipped cream.

Once your confection is "chilled and set" it will release from the foil easily. I would recommend the thicker heavy foil. I hope you give it a whirl. Good luck! :)

That should not be a problem. But the Heavy duty foil is very sturdy and can hold the shape of the cheesecake. Parchment paper will need to be supported.
Sour cream makes the cheesecake more resilient to freezing and is the method by which most frozen cheesecakes are made however you can substitute the following options... For each cup of sour cream, substitute: 1 cup plain yogurt OR 1 tablespoon lemon juice or vinegar plus enough cream to make 1 cup OR 3/4 cup buttermilk mixed with 1/3 cup butter HTH! :)
just got home with everything I need to make cheesecake. until I found out that I forgot strawberry jam ... I was so angry, everything was ruined! Now I have to wait until tomorrow (the shop is on the other end of town, and minus 15 degrees outside, and I will not tread on the bike down again). really looking forward to try cheesecake and eat it with some friends. You can use a standard measuring cup and fill it up to the 1 cup mark. 1 cup = 8 ounces. Any brand will be find.
