Premier Brand is the best. Some wet grinders do not give a good batter for various reasons..and one major problem is the heat from the grinder motor..thats why some grinders have built in exhaust fans to prevent affecting the batter adversely. The batter needs to be made a day earlier..about 6p.m the previous day..for a morning idli breakfast... and it needs to be "fluffed" using your cleaned hands for about 15mins..to let the air in and this technique gives fluffy batter rise!! Yes...this makes the mix of rice and dhall ferment and rise up well. Than leave the container well covered in a warm place...dont move it about. One good place will be like in the unused oven (not one that was used on that day)..as the heat will spoil the batter..what we need is just room temperature). The overnight fermentation will make the batter rise (so make sure the batter container is only half full!! If not you will have a cleaning session with overflowed batter!). Make your idlis or thosais,only after about 10 to 13 hours of making the batter with fermentation to get soft good idles. The quality of (whole) Urid dhall (NOT moong dhall) is also a major factor to get good idlis the rice can be the normal variety..do not add anything other than a little salt and a tablespoon of Fenugreek when soaking the rice and urid..SEPARATELY..Yes..Grind separately, the rice and urid and than mix the batter using the fluffing method with your clean hand...when fluffing the batter the air and the warmth from your hand preps it for overnight fermentation. Dont worry as long as your hands and fingers are well cleaned its healthy..afterall food like pizza are also made with hands! And for VADA you have to use Urid dhall too but no water other than water from the saoked dhall...if need be just springkle some..do not make it watery. Consistency!! Is the word!!!

Premier Brand is the best. Some wet grinders do not give a good batter for various reasons..and one major problem is the heat from the grinder motor..thats why some grinders have built in exhaust fans to prevent affecting the batter adversely. The batter needs to be made a day earlier..about 6p.m the previous day..for a morning idli breakfast... and it needs to be "fluffed" using your cleaned hands for about 15mins..to let the air in and this technique gives fluffy batter rise!! Yes...this makes the mix of rice and dhall ferment and rise up well. Than leave the container well covered in a warm place...dont move it about. One good place will be like in the unused oven (not one that was used on that day)..as the heat will spoil the batter..what we need is just room temperature). The overnight fermentation will make the batter rise (so make sure the batter container is only half full!! If not you will have a cleaning session with overflowed batter!). Make your idlis or thosais,only after about 10 to 13 hours of making the batter with fermentation to get soft good idles. The quality of (whole) Urid dhall (NOT moong dhall) is also a major factor to get good idlis the rice can be the normal variety..do not add anything other than a little salt and a tablespoon of Fenugreek when soaking the rice and urid..SEPARATELY..Yes..Grind separately, the rice and urid and than mix the batter using the fluffing method with your clean hand...when fluffing the batter the air and the warmth from your hand preps it for overnight fermentation. Dont worry as long as your hands and fingers are well cleaned its healthy..afterall food like pizza are also made with hands! And for VADA you have to use Urid dhall too but no water other than water from the saoked dhall...if need be just springkle some..do not make it watery. Consistency!! Is the word!!!
