  • This video ventures into a famous roasted duck producer somewhere north of Kuala Lumpur city. It documents every step taken to create the perfect roasted duck in a well organized manner that reminds us of an assembly line. The owner of this "roasted duck processing line" is none other than the son of a famed roasted duck stall operator at Petaling Street in the 60s. Now, this 2nd generation owner is well equipped with first-hand knowledge and traditional "secrets" to become the roasted duck "sifu" in the city. In fact he studied culinary science and has worked in a Japanese restaurant before. Nevertheless, combining experience with his family's secret formula , he has perfected this traditional favourite for all to savour. It begins with the right ingredients for the stuffing, properly dipping the stuffed duck into a special sauce mixture, then letting it hang to marinade gently before being put into a "sauna" roaster to let it mature into golden red brown roasted duck. Some of the "equipment" used are "inherited" from the past too. Besides these roasted variety, the "processing line" also produce the Peking duck variety upon request. Once done the roasted duck are packed hygienically and elegantly for takeaways. One of the most important ingredients of the roasted duck is the magic gravy that must accompany the roasted duck serving ! The video shows, in brief, how this unique magic gravy is made.

    Use plastic cable tight on roast duck and you dare to say is hygiene. this will create toxic in the duck.
