I do mine differently but I love when people take recipes and make it there own. You have to use what you got for sure. Mine is different then my husbands mother but it's just like Hawaiian food we all got the basics and make the recipe to fit us. I use green papaya, grape tomatos cut in half, fresh green beans when I can't find the other ones, roasted peanuts on the side..I use fish sauce, thai chili when I can find them, limes, dried shrimp, garlic, and tamarind and palm sugar (or coconut sugar or brown when I can't find palm).... I mash my garlic, shrimp, thai chilis in the pestal, add green papaya and the green beans (uncooked ) and add the fish sauce, tamarind, palm sugar and limes juice... the order is a bit out of whack...but that is the jist! I think I will try yours too just to see ..Thx for the recipe!

Have to agree with that comments never seen coriander in Som Tam before even if you go to 10 different street merchants you will not see them using coriander in this dish.
I understand this is not the real way however here in Hawaii many things are made to their likings... like when it comes to Puerto Rican, Mexican, Chinese, etc etc, it has a lot to do with what we have and or how we grew up learning how to do which became our version of whatever it may be... in fact my moms friend who is from Thailand and she cooks things differently in her eatery because it’s more suitable for the pallets here... she actually just eats the dang Chile’s as is lol.. so please don’t be offended...
I know what you mean. Especially the mortar and pestle that's being used. I guess everyone has their own version of a dish, but it's kinda nice to stick with the basics too. That jalapeno pepper totally threw me off and a few other things. 🤣

I miss Hawaii. My mother's side is native Hawaiian and also multi-ethnic like most everyone else on the islands. Now that I am an adult I find I love Asian cuisine the most because of the influence on everyday food I grew up with when staying in Hawaii over the summer with that part of my family. Southeast Asian was not as dominant as Chinese, Korean, Filipino and Japanese food in my experience however. I've only recently began to make and appreciate food items like green papaya salad. I always seek white colored flesh. Even when the papaya is green sometimes the flesh is too pink or yellow so you have to be careful. You never want the papaya to be sweet. Then again there are many ways you can vary this wonderful dish.

Hello I'm from Philippines we have plenty of papaya plants I will try your salad papaya soon.
Instead of throwing the lime skin away, I like to pound a piece of it together with the garlic/peppers. It adds a very fragrant zest to the dish!
