    Ingredients
    • 3 to 4 pounds oxtail, cut into pieces
    • 1/4 cup olive oil
    • 2 medium onions, diced
    • 2 cloves garlic, crushed
    • 2 large carrots diced
    • 1 cup red wine
    • 4 cups beef stock
    • 1/4 cup tomato paste
    • 1/4 teaspoon salt
    • Freshly ground black pepper
    • 1 cup of plain flour
