Well people have their likes and dislikes, but there's a dish similar to this pastelon (puerto rican lasagna), using the sweet platains, but if your not a fan of the whole sweet and salty thing, jibaritos is basically a sandwich using the unripe plantain as the "bread" it's pretty good :)

Hey ! Plantain taste sweets while beef onion peppers taste salty. YOU CAN NOT mix sweets with salt 😝🤢

As a chef I can assure you that these flavors work I once did a chirzo/onion and pepper gnocchi with a pumpkin cream sauce yuuummm!!!!
