I love this so much! This country owes a great debit to immigrants and the City of Springfield owes a great debit to the Leong family.
I lived in Springfield from 1997-2000. I would not be exaggerating when I say the #1 thing I miss is Springfield cashew chicken. No one makes it like they do in Springfield. I know. I've checked.
Fast forward to 2020. I am an electrician at San Francisco Intl Airport. Come to find out, journeyman/supervisor's family owns Shanghai Inn and Peking House restaurants in Springfield.

I used to live in Springfield. Undergraduate years. I had cashew chicken a couple times a week and would never tire of Chinese food. Whenever I am back in Springfield I have to have my three favorite things: Cashew Chicken, Mexican Villa's Burrito Enchilada-style, Andy's Frozen Custard espresso concrete. Yummy, just thinking about it ❤ Great city, great memories.
