Keep in mind here, iroh was focused on zuko not himself, zuko was malnurished and aang and the gang were sleep deprived and exhausted, azula was basically fighting everyone with debuffs lol, and she still never panded an actual hit on aang
Zuko coming in psyched up ready to fight Azula only to get knocked on his ass in ONE HIT, my man gets endless disrespect from the writers

I don't know what the term, but azula pretty aware what happened in surrounding. She saw uncle not focus on her because uncle realized toph with the avatars, and attack him. And ofcourse because uncle iroh is the most experienced so she need to beat him first.

I'm not sure how to explain lightening bending other than firebenders can sometimes do it. There are other types of sub-bending that are explained throughout the show. It is not a separate form of bending, it's considered part of firebending.

Azula is RUTHLESS.
My head cannon is that Iroh knows Azula will aim for the weak link, and Toph, a blind little girl, would be the obvious target. Iroh was expecting her to aim for the Toph, which caused him to not be prepared when she shot him instead. Also, you could argue that Iroh, himself, is the least likely target in general due to being easily the strongest fighter in that scene, so his guard wasn't up to protect himself, but if anyone else had been the target, he would've been ready.
What? He was realizing that the friends she talked about was the Aang gang and that she was with the avatar. That is why his view pans from her to him. Azula abused his moment of distraction to aim at him.
