- Today we cook a Biryani recipe with 200 Quail. We use the biryani cooking method which is used in the marriage function.
We don't need to add any biryani masala but we gat the aroma and taste of the biryani by adding spices and other ingredients perfectly.

This is the best way to make bhiryani. Boil the rice aside properly but not overcooked. It's an art to have flower like loose rice. I would have seered, after semi boiling the quail, a bit in oil to give it a crisp texture, before adding it to the base puree with vegetables. Bit of curd must be present in the base. I'd grind the cashews and add to the stew now. For magic, I'd 3/4 the curd and mix with 1/4 fresh sour cream at the stage when curd is added to the stew. I'd add sugar always. Now with the quails added in and cooked into the sauce and reduced adequately I'll add the boiled rice in 7/10 boiled state. I personally don't like bhiryani mix bits in my mouth, so I'd fry a bit into the oil, strain it out, put it into a cooking cloth thin, and tie it and put into the rice adding stage between the rice. Many small cloths better. And you have magic
