    In this video, we make a simple fermented take on Hawaiian chili pepper water. Since we grew our own Hawaiian chili peppers, we had to give this recipe a shot. Most recipes are not fermented, but this version from Fiery Ferments allows the mixture to ferment for about 1 week, with tasty results!

    Ingredients*:
    5-10 Hawaiian chili peppers
    2-3 slices fresh ginger
    1 clove garlic
    2 cups water + 1 Tbsp salt
    1 Tbsp rice vinegar

    They sell something similar in Puerto Rico in small Bacaradi rum bottles at the side of the road. It's called Pique, and it's awesome. It's nice to see a new video pop up.

    How fun! We always have a bottle of chili pepper water in our fridge. In Hawaii we often put it in stew! But you can really dash it in anything from saimin (Hawaiian-style ramen) to Japanese curry or onto your eggs of course. Never thought to add ginger though. I'll give it a try next time.

      Over here in the UK last year I had a batch of ginger that was labelled as Hawaiian Ginger and it had a blue layer under the skin... do you know of this type (or is it a European marketting thing?)

      ⁠​⁠@@markzambelliHmmm. In Hawaii most ppl will think of the red flower of the decorative Hawaiian ginger plant, which is not cultivated for eating (although “normal” ginger is also grown here). Never heard of the blue ginger myself, but it just might be that I’m not that educated in ginger varieties! Haha.

    This is what got me into peppers, I love chili pepper water. I think I have 6 HCP plants growing in my grow tent.

    When I ferment a batch of peppers, I always retain the water, bottle it up, and store it in the fridge for use in sauces, soups, or other dishes. Depending on the type of peppers used, this water can have an awesome taste. I believe this recipe captures a similar flavor.

    Hawaiian Chili Pepper water is not typically fermented. I kept my Hawaiian Chilis over winter indoors last year and the bush was full of red chilis this year !

    Looks interesting, will have to give it a go. Just with the salt are you able to give a weight? Just here in Australia we don't usually use kosher salt so it can get a bit confusing as to what a tablespoon is. Looks like you used rock salt here?

    You said these peppers are native to Hawaii. 🤔 The Hawaiian Chile is not native, but was actually introduced to Hawaii around 1815, and was called ‘nioi, by the Hawaiians, a generic name given to all chiles with second names based on its shape such as ‘nioi kamakahala’ for round or ‘eye shaped’ types.

      @@PepperGeek They for sure are not. I'm from Kauai and can confirm some of the Hawaiian aunties ferment their Hawaiian Chili Pepper water, and some don't. It's common knowledge that lots of families have their own preferred recipes, like you said you can experiment with this recipe in many ways in terms of ingredients. The original recipe was a no vinegar just water and salt + peppers ferment in the ancient days when they didn't have garlic, ginger, or vinegar nor refrigerators.
