Jennifer Osterlund totally! Just soak the rice noodles in warm water for 10-15, drain and proceed. (You make have to cook the noodles in the sauce for about 5 minutes after adding)
Do you have any seafood recipes? Because these all look delicious but I dont eat meat unless its seafood. Lol

Looks yummy! I am not an expert or anything but olive oil tends to have a stronger fruity flavor so adding vegetable oil which is more flavorless may be better when enhancing and mingling with the flavors of the thai sauce. The slight flavor of olive oil may be there but i guess any oil is fine. just a small detail.
