I love the sound it makes. And he makes it look so easy as well. I've tried chopping a pork rib like that... Knife either bounces right off if I don't use enough force coming down, or splinters the bones into a million little shrapnel if I use too much force. Tried like 4 different cleavers as well. Admittedly, the cast iron one like the one he's using worked marginally the best but it's a pain in the ass to maintain as a home user. Really trying to make do with my stainless steel ones but they're just too brittle at times
giaeigjiajeg. This gentleman was using a debone knife which can cut through bones. With the bones which tasted much better than the meat alone.
I have lived in Mainland China for so many years and even in Shenzhen and Shanghai there are still no decent Cantonese BBQ.
