If you want to tame the roastiness and have a more juicy cup, just up ppm on brew water. Obviously you can make it more complicated but that’s a quick fix.
I haven't heard that before. But interestingly, I just had an experience that affirmed that. I typically use TWW 1/3. Last week I bought aquacode. 1 packet in a gal gave me around 150 ppm. I used it on this CC Takesi and the roast flavor was less apparent. This was a couple days ago before I read your comment. I'll keep this in mind

I roast coffee pretty light like most good Scandinavian roasters but if it wasn’t for tweaking water I would’ve missed out on some good slightly more developed roasts. Only negative with upping your ppm is your mineral ratios have to be somewhat dialed otherwise it might tame some negative flavors while magnifying a few other things you don’t want.

That Takesi was the darkest roast I've had in a while. Very different from the previous CC releases. It brought out some rich fruitiness.
